COUNTRY STYLE FRIED SKILLET POTATOES
If possible use a cast-iron skillet for this but any skillet will do, also use only shortening for this. Cooking time is only estimated depending on the size you cut the potatoes, adjust all seasonings to taste. Make certain that you the cooked cubed potatoes are cold before using in this recipe!

Steps:
- 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
- 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
- 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
- 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
- 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.

~ GRAMS COUNTRY STYLE POTATOES & GREEN BEANS ~
These green beans bring back many great memories of my Gram. I always admired what she was able to do with so little ingredients. This was one of my favorite meals she would make with the abundance of fresh green beans and new potatoes from her garden. She sure could cook and fresh veggies always made such a difference. Here's to...

Steps:
- 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
- 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
- 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
- 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!

- Meanwhile, preheat the broiler to high.
- Place the potatoes under the broiler 3 or 4 inches from the source of heat. Broil 6 to 8 minutes or until golden brown and slightly bubbling on top.

Tips:
- Choose the right potatoes: Yukon Gold or russet potatoes are best for this recipe as they hold their shape well and have a creamy texture.
- Cut the potatoes evenly: This will ensure that they cook evenly.
- Don't overcrowd the pan: Give the potatoes enough space so that they can brown properly.
- Season the potatoes well: Use a generous amount of salt and pepper, and add other seasonings to taste.
- Cook the potatoes over medium heat: This will help them to cook through without burning.
- Stir the potatoes occasionally: This will prevent them from sticking to the pan and help them to brown evenly.
- Serve the potatoes hot: They are best enjoyed immediately out of the oven.
Conclusion:
Country-style potatoes are a simple but delicious side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect country-style potatoes every time.
