Adaptation of a recipe I saw on a cooking show a few years ago. I've listed exactly what I used on this occasion but of course a lot of variations are possible and different styles of cheese may be used.

Steps:
- Whisk eggs in a medium bowl.
- Add grated potato, parsley, ham, pepper, sage and onion to bowl and mix.
- Melt butter in pan over medium heat and add mixture, set temperature so it is just bubbling.
- Evenly spread mushrooms, tomato, capsicum and cheeses over top.
- Cook without turning until top is starting to firm, around 30 minutes.
- If required flip over and cook other side around one minute to set egg.
- Serve cut in half without folding.

- 1. Apply some butter to a microwave baking dish.
- 2. Then layer the base with crushed wafers,sprinkle chopped capsicum and onions.
- 3. Microwave uncovered it for 2 minutes on high power.
- 4. n a small bowl mix eggs,milk and salt.
- 5. Then pour the egg mixture onto wafers and cover the microwave on medium power for 5 minutes or till the egg almost done.
- 6. After 5 minutes touch the egg and see weather egg has done fully if not then again keep in microwave for 2 minutes.
- 7. Then remove it and sprinkled grated cheese on the egg mixture and again microwave it for 1 minute.
- 8. Stand it for 2 minutes.
- 9. So finally our country style omelette has done.
- 10. Serve hot and garnished with chopped coriander.
