1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions, white and green parts
1/2 pound smoked ham slices, 1/2-inch diced

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley, scallions and ham. Reheat on top of the stove or over a hot charcoal grill.
  • Cook's Note: Use any leftover potatoes in Potato Basil Frittata (see recipe) for lunch.
  • You can peel and dice the potatoes early and keep them in the refrigerator in a bowl of cold water. Drain them and dry them well with paper towels before frying.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.

This is my version of a recipe I found on the back of a country gravy mix package. I made it for our community coffee and it was gone before I got back to take a picture. I also got quite a few requests to repeat the casserole again soon.

1 pkg country gravy mix (makes 2 cups)
4 c frozen diced potatoes, defrosted
1 Tbsp vegetable oil
1 lb mild country sausage, browned & crumbled
2 large eggs, beaten
1-1/2 c shredded cheddar cheese

Steps:

  • 1. Prepare the sausage gravy according to package directions. Take off the heat to cool. (Be sure the mix makes 2 Cups of gravy)
  • 2. Heat oil in large skillet; brown potatoes, stirring frequently to get a nice golden brown.
  • 3. Brown the sausage well and break up into small pieces; drain well.
  • 4. In 9X13" pan place potatoes; sprinkle the sausage over the potatoes;
  • 5. Stir beaten eggs into the gravy; pour evenly over the sausage.
  • 6. Bake at 350 degrees for 25-30 minutes until the center of casserole is hot. Sprinkle the cheese over the casserole and return to oven about 5 minutes, or until cheese is melted.

Tips:

  • Use a large skillet to ensure that the potatoes have enough room to brown evenly.
  • Be patient when browning the potatoes. It takes time to achieve the perfect golden-brown color.
  • Don't overcrowd the skillet. If you add too many potatoes at once, they will not brown properly.
