8 slices Thick-sliced hickory-smoked bacon (reserve 2 raw slices)
1 Sweet Vidalia onion (sliced)
6 cups Fresh organic green beans (cleaned, stems and tips removed)
5 large Red-skinned potatoes (cut into bite-sized pieces, skin on)
4 cups Organic Chicken stock (+ enough to cover)
Kosher salt (own taste)
Freshly ground pepper (own taste)
1 tablespoon Bacon drippings or real butter

Steps:

  • Heat a medium-sized cast-iron skillet on low to medium heat before adding thickly sliced pieces of hickory smoked bacon, cook slowly until the bacon has browned and become crisp. Do not overcook the bacon.
  • Place the bacon on baker's rack to drain excess bacon grease and keep the crispiness of the bacon.
  • Drain most of the bacon grease from the cast iron skillet and place it on medium heat. Add the sliced onions and cook for about 3 minutes. Remove the cast-iron skillet from the heat.

1 to 2 cups chicken broth or 1 (14.5 ounce can (You don't have to use the chicken broth. I just think it makes them better))
1 ham hock (Can use cooked ham, bacon, pork jowl or salt pork about a half cup, chopped)
2 to 3 cups water
1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup finely diced onion (Optional)
1 teaspoon minced garlic (Optional)

Steps:

  • Combine all ingredients in a large pot, bring to a boil, then turn to medium low and cook about 1 1/2 hours until potatoes are done and water has cooked down. You can also do this in the crockpot and let cook on low 6 to 7 hours or high 4 hours.

1 ham hock (use 2 if they are small)
2 (14 1/2 ounce) cans green beans, drained and rinsed
1 large onion, chopped
10 small red potatoes, peeled and cubed
1 tablespoon seasoning salt (if needed, use your own judgement as ham is often quite salty on it's own. You can always add the se)
2 teaspoons ground black pepper
1 tablespoon garlic powder

Steps:

  • Place the ham hock('s) and onion into a 4 quart Dutch oven and fill half way full with water.
  • Season water with salt, pepper and garlic powder and bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot.
  • Discard bones and skin.
