1 red bell pepper, small chopped
1 green bell pepper, small chopped
1/2 medium red onion, chopped
2 lbs. yellow or red potatoes, small chopped
2 cloves garlic, minced
1/4 cup olive oil
1 teaspoon Italian seasoning
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes, optional

Steps:

  • Preheat oven to 400 degrees F.

3 cups yukon gold potatoes, peeled and diced, approx. 1 lb
1 large green bell pepper, cut into 1/2 inch strips
1 large red bell pepper, cut into 1/2 inch strips
1 small red onion, peeled and finely diced
1 (2 ounce) envelope Lipton Recipe Secrets onion soup mix
1 1/2 cups water

Steps:

  • In a 12 inch skillet, heat oil over medium-high heat. Brown sausage on all sides and remove.
  • Cut sausage into 1-inch slices (when slightly cooled) and set aside.

¼ cup olive oil

½ cup white wine
½ cup chicken stock
