- If your meat grinder comes with a coarse and a fine grind attachment, grind the meat first through the coarser disk. Put all the remaining ingredients in a spice mill or blender and process until ground evenly. Add the ground seasonings to the meat and mix in well. In a frying pan on top of the stove, fry a little piece of the sausage and taste for seasoning. Correct the seasoning to your own taste. If you think the sausage is too fatty, you may add some more lean meat (and it needn't be pork: veal is fine, and oysters are delicious); you may want more hot peppers.
- Put the properly seasoned forcemeat through the fine grinder.

COUNTRY STYLE SMOKED SAUSAGE, HAM AND SPLIT PEA SOUP
This is the soup I make after I have baked my Recipe #262247. This soup uses split peas, but you can just as easily use yellow or red split lentils instead (same weight and cooking instructions). Many old style recipes require that the split peas are soaked overnight before starting recipes but this is not normally necessary nowadays. However, be sure to read the packet instructions carefully. If the split peas are soaked overnight their cooking time can be reduced to around 40 minutes. This recipe does not require overnight soaking however. If you have made my Recipe #262247, you will not need to add the vegetables listed here - unless you want extra vegetables, as the stock will already contain them. The cooking time will then depend on the split peas or lentils only. This serves 4 hungry people in large, deep soup bowls as a main course soup dish. It is wonderful with crusty bread rolls or baguette. This also makes a fabulous soup to take on a picnic in the Autumn or Winter, just what the doctor ordered!

- WHICH GAMMON or HAM?.
- I used a cooked boneless ham joint throughout this recipe. If you use an uncooked ham, you will need to cook it (see instructions below) which will leave you with homemade stock for the soup.
- Sometimes ham or gammon can be very salty, especially gammon from supermarkets. To remove most of the salt, soak the gammon in water for two hours before cooking and pour away the water. Then simmer it for 15 minutes, pour away the water and add new water for the remaining cooking time.
- If the ham or gammon joint you buy is too large, put what is left in the fridge and use it for sandwiches,or as a main meal another time.
- As a very easy alternative, use pre-cooked ham which saves all the bother of cooking your own ham / gammon joint. If you decide to use pre-cooked ham, just ignore the first step of the recipe, OR you might have cooked my Celebration Spiced Ham with Orange and Marmalade glaze already - so the stock base and ham will be done!
- Whatever ham or gammon is used, it's fine if it is smoked or un-smoked - I used un-smoked.
- Cooking the Ham or Gammon:.
- Pour 3 pints of water into a largish pan and bring to the boil. Turn the heat down until the water is simmering (barely boiling). Place the uncooked gammon in the pan. If the gammon is covered half way to all the way by the water you're OK. Chop the gammon into smaller pieces if it's not at least half covered. The cooking method is the same whatever ham or gammon joint you use. Cook for around 50 minutes.
- Turn the ham over about half way through cooking.
- Immediately after the ham is put on to cook, start on the vegetables.
- Cooking the Soup:.
- Chop up the onions and carrots into small cubes, and place all the vegetables, split peas and chopped parsley into a pan, pour in the stock and bring to the boil. Then lower the heat so that the mixture is just simmering (just below boiling).
- This will need to be cooked for around one hour, maybe one and a quarter hours if you want your vegetables soft.
- The ham or gammon should be cooked after about 50 minutes, just enough time to prepare it before the vegetables are cooked.
- Remove the ham from the pan, and chop it into small cubes. Chop up the smoked sausage to the same size.
- The final step is to add the ham and smoked sausage to the soup and heat gently for about 5 to 10 minutes. Stir well and have a quick taste. More salt and pepper can added if the soup needs more seasoning.
- Serve the soup into bowls and add some extra chopped parsley if you have any available. Serve with crusty bread rolls or French bread/baguette.
- This soup freezes well and will keep in the freezer for a month.

- Before you get started, get your biscuit's on a pan following the pkg. directions.
- While your sausage if frying up, put your biscuits in the oven, by time your done make this, your biscuits will be done, and nice and hot.
- In a large frying pan, brown your sausage and break it up with a snake potato masher or fork.
- Once it is nicely browned, pull sausage to the sides of the pan so that the drippings drain into the middle.
- Spoon a 1/2 cup of the flour into the drippings and mix good till it's nice and brown, add a little more flour if need be.
- Once you have the flour browned, start folding in the sausage.
- Mix 2 cups water with 1 cup milk and stir together.
- Start slowly pouring the milk and water mix into the the sausage mixture,.
- Only pour what you need to get a nice consistency.
- (Tip): if you need to add more flour after the milk and water have been added, you need to add the flour to a little cool water, stir till smooth, then add that to your sausage mixture, otherwise like any other gravy, you will get flour lumps.
- Use your judgement on adding more milk or water to your taste.
- * Don't forget: heat of flame must be at least Medium High heat so that the flour will expand and smooth out.
- Once you get it to how you like it, turn your heat down, you don't want to burn your gravy. AND -- the gravy will thicken as it sits, so don't make it too thick.
- Add salt and pepper and a teaspoons of sage. (the sage is to your taste also, but we've been using it since I was born., and it just makes it wonderful. If you like Bob Evans sausage gravy, you love this even more).
- Pour over freshly baked buttermilk biscuits -- or your own.
- ( but if your making your own, make them first before you even think of making this gravy).

- 1. Preheat oven according to pie crust instructions. Unroll pie crust and gently press into a pie plate crimping the edges using your fingers. Poke crust with a fork and bake the crust for approximately 5 minutes just to get it started.
- 2. Meanwhile brown sausage in a medium skillet, drain on paper towel cool slightly. *I often use leftover chicken, roast beef, bacon bits, diced ham, sausage or a combination of two.
- 3. While sausage is cooling use the same skillet to add 1 T olive oil & saute 1 - 1 1/2C mixed veggies diced in uniform pieces. I used 1/4 diced onion, 1/4 diced yellow bell pepper, 3 T. sliced mushrooms, 1/2 small zucchini diced. Let cool slightly. *any combination works: Chicken & broccoli or ground beef, onion, black olive w/salsa are some favorites*
- 4. In a small mixing bowl combine eggs, half & half, red pepper flakes, mustard, garlic & onion powder, thyme, worcestershire sauce, salt & pepper and whisk really well. *using half & half (my favorite) or heavy cream makes this dish rich and decadent. Using milk just lightens this up a bit.
- 5. Layer into pie shell browned meat, veggies, 1/2 of the shredded cheese & gently pour egg mixture over everything. Cover crust with foil and remove last 10 minutes of baking time.
- 6. Bake at 375 degrees for 40 minutes until middle is done. *I place the quiche on a large cookie sheet to avoid boil over/spills in my oven.
- 7. Remove from oven and top with remaining cheese and let stand for 10 minutes before serving. This is really good served room temperature too.

- 1. The bread should be completely stale. If not, spread the cubes on a baking sheet and put in a low oven (250 degrees) for about 1 hour to dry them out. (I think this light toasting gives the dressing a better flavor.)
- 2. Heat the vegetable oil in a large skillet. Add the sausage meat and brown it, breaking up meat into pieces about the size of a quarter. This need not be precise. Transfer meat from skillet to large bowl, using a slotted spoon. Add onion and celery to the skillet. After 1 minute, add the apples and cook 2 more minutes. Place in bowl with sausage.
- 3. Add bread cubes, parsley and sage to the bowl.
- 4. In a separate bowl, mix the eggs and stock with the salt and pepper. Pour this over the sausage mixture and gently toss all the ingredients. They should combine without mushing.
- 5. Generously butter a 16-inch baking pan (2 tablespoons). Spread the mixture in the pan and dot with more butter (4 tablespoons).
- 6. Preheat oven to 350 degrees and bake for 50 minutes to 1 hour. The top should have a nice golden brown crust.

- 1. THE HASH BROWNS
- 2. Chef's Note: The amount of potatoes used in this recipe will depend on the size, and type of your waffle iron.
- 3. Gather your ingredients.
- 4. Using the large holes on a box grater shred the potatoes, and the onion.
- 5. Lay them on paper towels, and press to remove as much moisture as possible.
- 6. Add the onions, and the potatoes to a bowl, and then combine with the seasoning, ingredients: salt, pepper, cayenne, and paprika.
- 7. Place the ingredient in the middle of a tea towel.
- 8. Squeeze the towel to remove most of the remaining liquid.
- 9. Chef's Note: The removal of the excess liquid is essential to producing a nice crispy hash brown.
- 10. Return to the bowl, and carefully mix in the egg, cheddar cheese, and sour cream.
- 11. Brush the grapeseed oil on the top and bottom portions of the waffle iron.
- 12. Preheat the waffle iron.
- 13. Chef's Note: If the waffle iron you are using has a heat setting, place it at 100 percent. This should give you a crispy outside and a soft inside.
- 14. Add a generous portion of hash browns to the waffle iron.
- 15. Close the lid and allow them to cook until crispy, about 12 to 15 minutes.
- 16. Chef's Tip: All waffle irons are different, so the timing for yours might be longer, or shorter. Take a peek now and then.

- Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper.
