'Sage is my favorite seasoning, so I'm always pleased to fix and serve these rugged golden loaves,' relates field editor Geraldine Grisdale of Mt. Pleasant, Michigan. 'They're crusty on the outside and chewy inside.'

Time 40m

Yield 32

Number Of Ingredients 11

1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees to 115 degrees)
1 teaspoon sugar
¼ cup toasted wheat germ
2 tablespoons vegetable oil
1 tablespoon honey
2 teaspoons rubbed sage
1 teaspoon salt
½ teaspoon dried rosemary, crushed
½ teaspoon ground nutmeg
2 cups all-purpose flour

Steps:

  • In a large mixing bowl, dissolve yeast in warm water. Stir in sugar; let stand for 5 minutes. Add the wheat germ, oil, honey, sage, salt, rosemary, nutmeg and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes.
  • Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into two oval loaves. Place on a greased baking sheet. Cover and let rise until doubled, about 15 minutes.

COUNTRY SAUSAGE GRAVY

Country Sausage Gravy image

This is a family favorite that my dad taught me long ago. It's very filling and if company arrives unexpectedly for breakfast, just add more flour and milk. This recipe works best with a cast iron skillet as it holds heat so well. And besides, it makes the meal more authentic! Serve over buttermilk biscuits.

Time 35m

Yield 4

Number Of Ingredients 13

1 pound pork sausage
1 onion, finely chopped
1 green bell pepper, finely chopped
1 teaspoon crushed red pepper flakes
2 tablespoons garlic, minced
4 tablespoons unsalted butter
salt and pepper to taste
4 tablespoons all-purpose flour
1 teaspoon minced fresh sage
1 teaspoon minced fresh thyme
2 cups milk, divided
2 cubes chicken bouillon
¼ cup minced fresh parsley

Steps:

  • In a skillet on medium heat cook pork, onion, green pepper, red pepper flakes, and garlic until pork is crumbly. Drain off excess fat, but leave a small amount.
  • Combine butter, salt, and pepper with the meat mixture and stir until butter melts. Slowly sift flour over the top. Mix gently and allow mixture to cook for 5 minutes. It will burn, so do not let it sit unguarded. Don't forget to scrape the bottom of the pan. Add the sage and thyme.
  • Slowly stir in milk, about a half a cup at a time, and incorporate it well. When the mixture thickens, add more milk. Do not let it boil vigorously, or it will burn. Add chicken bullion and let cook for five minutes. Again, if it thickens too much, add more milk. Adjust taste with more salt and pepper if needed.
  • Just before serving, add the parsley, and about a 1/4 cup more milk; the gravy will thicken quickly as it cools.

Tips and Conclusion: Baking Perfect Country Sage Loaves

Tips:

  • Mise en place: Before starting, measure and prepare all ingredients and ensure that all equipment is clean and ready to use. This will help streamline the bread-making process.
  • Mixing and Kneading: Use a stand mixer fitted with the dough hook or mix and knead the dough by hand in a large bowl. Mix on low speed for about 3 minutes until the dough comes together, then increase the speed to medium and knead for 5-7 minutes, or until the dough is smooth, elastic, and slightly tacky.
  • Proofing: Place the dough in a greased bowl, cover it with plastic wrap or a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size. This allows the yeast to ferment and produce gas, giving the bread its characteristic airy texture.
  • Shaping: Once the dough has risen, divide it into two equal portions. Shape each portion into a loaf by gently stretching and rolling it into a long, thin rope. Fold the rope in half and pinch the ends together to form a loaf shape. Place the loaves on a greased baking sheet, cover them with plastic wrap or a damp cloth, and let them rise for an additional 30 minutes.
  • Baking: Preheat the oven to 375°F (190°C). Before baking, brush the tops of the loaves with melted butter or an egg wash (one egg beaten with a tablespoon of water). This will give the loaves a golden-brown crust. Bake for about 25-30 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
  • Cooling: Once the loaves are baked, remove them from the oven and let them cool on a wire rack for at least 15 minutes before slicing and serving. This allows the bread to set and develop its full flavor.

Conclusion:

Baking country sage loaves is a delightful and rewarding experience. With careful attention to ingredients, techniques, and timing, you can create homemade bread that is both delicious and visually appealing. Remember to use fresh, high-quality ingredients, follow the steps precisely, and adjust the baking time and temperature according to your oven's characteristics. With practice and patience, you'll be able to master the art of baking these flavorful loaves and impress your family and friends with your culinary skills. Happy baking!
