Steps:
- Grab a good sized pot.
- Set the heat on the stove to medium high.
- Cook the bacon in the pot until brown, but not crunchy (include onion in this step cooked until translucent if desired).
- Add canned beans with juice to pot, making sure to stir the bacon and its juices into liquid.
- Add pepper sauce, salt, and pepper to pot.
- Leave on medium-high heat, uncovered, until beans and liquid come to a slight boil.
- When a boil is achieved, stir, turn the heat down to medium-low and cover (adjust the heat so the beans are just about boiling with the cover on but not boiling out of the pot).
- Cook for 1 hour, stirring every 10-20 minutes.
- Add more spices if desired (take a taste test every now and then).
- For fresh beans, before cooking as directed above, boil beans in enough water to cover + 1 teaspoon salt for 5 minutes (I feel this helps get rid of the strange taste some fresh green beans have).
- Drain.
- Add fresh green beans to recipe as indicated, but add enough water to cover once more.

SLOW-COOKED COUNTRY GREEN BEANS
While the cooking time may seem extremely long, this is an old-fashioned Southern means of cooking vegetables. When cooked this way, the beans are served with their "pot liquor" and cornbread to sop it up.

GREEN BEANS AND COUNTRY HAM, SOUTHERN-STYLE RECIPE - (4/5)
Provided by Becky Jo

Steps:
- Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

Steps:
- 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
- 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
- 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
- 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
- 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.

~ GRAMS COUNTRY STYLE POTATOES & GREEN BEANS ~
These green beans bring back many great memories of my Gram. I always admired what she was able to do with so little ingredients. This was one of my favorite meals she would make with the abundance of fresh green beans and new potatoes from her garden. She sure could cook and fresh veggies always made such a difference. Here's to...

Steps:
- 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
- 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
- 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
- 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!

Steps:
- Preheat oven to 250 degrees. Cook rice according to package instructions; cover, and set aside. In a wide, shallow bowl, beat eggs; in another, combine 1 cup flour with paprika. Season eggs, flour mixture, and steaks with salt and pepper. Dredge each steak in flour, then dip in egg; allow excess to drip off, then dredge in flour again.
- In a large cast-iron or nonstick skillet, heat 1/4 cup oil over medium-high. Cook steaks in skillet until crust is golden, 3 to 4 minutes per side. Transfer to a baking sheet, and place in oven to keep warm.
- Pour off all but 1 tablespoon oil from skillet. Add remaining teaspoon flour; cook, whisking until golden, about 30 seconds. Gradually add milk while whisking; raise heat to high, and boil until thickened, 4 to 5 minutes. Season gravy with salt and pepper. Cover, and set aside.
- In a medium skillet, heat remaining teaspoon oil over medium-high. Add onion; cook, stirring occasionally, until softened, about 4 minutes. Add green beans and 1/3 cup water; cover, and cook until green beans are bright green, 1 to 2 minutes. Uncover; continue to cook until green beans are crisp-tender and onion begins to brown, 3 to 4 minutes more. Reheat gravy, thinning with milk if necessary. Serve steak with green beans, rice, and gravy.

Place onion on top of green beans, cover with a lid and bring to a light boil. Turn heat down to low and simmer beans for 45 minutes. Cooking the green beans for 45 minutes on a very low simmer will blend the flavors. This recipe yields 4 to 6 servings.
COUNTRY GREEN BEANS
Steps:
- 1. In a saucepan, combine all ingredients. Cover and simmer for 15-20 minutes or until beans are tender.
COUNTRY GREEN BEANS
Steps:
- Parboil the beans, 3-5 min(?) or until "al dente". Drain & rinse them in cold water. Meanwhile, mix 2 slightly heaping tbsp flour with 1 tsp mustard powder and give it a good stir. Heat 2 tbsp butter. Cook the onions in butter over low heat for about 5 minutes while stirring occasionally. After 5 minutes add bell pepper and garlic and cook for another 5 minutes. Add the flour to the vegetables and cook for 2 minutes over low heat. Slowly whisk in the beef broth & cook until sauce is thick. Season with pepper to taste. Making bundles of about 5-6 beans at a time, dredge them through the beef sauce, coating beans generously. Wrap each bundle with a slice of raw bacon. Cook in a 400F oven about 10 minutes per side - if you cook in the oven, place on a rack so that grease can drip down, ensuring crisp bacon. OR Cook on the grill about the same length of time
Tips:
- Choose fresh green beans: Look for beans that are firm, crisp, and have a deep green color. Avoid beans that are wilted, bruised, or have yellow or brown spots.
- Trim the green beans: Before cooking, trim the ends of the green beans. You can also remove the strings from the beans if desired.
- Cook the green beans properly: Green beans can be cooked in a variety of ways, including boiling, steaming, roasting, and stir-frying. Be careful not to overcook the beans, as they will become mushy.
- Season the green beans: Green beans can be seasoned with a variety of herbs, spices, and sauces. Some popular seasonings include garlic, onion, salt, pepper, butter, and lemon juice.
- Serve the green beans immediately: Green beans are best served immediately after cooking. They can be served as a side dish or as a main course.
Conclusion:
Country green beans are a delicious and versatile side dish that can be enjoyed by people of all ages. They are packed with nutrients and can be cooked in a variety of ways. With a little planning and preparation, you can easily make a delicious and healthy dish of country green beans that your family and friends will love.
