Time 1h

Yield 4 to 5 servings

Number Of Ingredients 7

2 teaspoons salt
2 cups water
1 chicken (fryer), cut into pieces
1 1/2 cups self-rising flour
1 teaspoon black pepper
1/2 teaspoon salt
1 1/2 cups shortening

Steps:

  • In a bowl, mix 2 teaspoons salt with 2 cups water. Put in the chicken parts and let soak for 15 to 20 minutes. Drain. Mix together the flour, pepper and salt and batter the chicken by dipping the pieces in the flour mixture until they are coated on all sides, shaking off excess flour.
  • In a skillet, over medium heat, heat the shortening. It should be at 350 degrees. If the shortening appears too hot, remove the skillet from the heat and let it cool a little. Brown the chicken on all sides, reducing the heat if needed as it cooks. It takes about 20 minutes to fry chicken for it to be well done.

Categories     One Dish Meal

Time 38m

Yield 6 serving(s)

Number Of Ingredients 11

3 boneless skinless chicken breasts
2 tablespoons vegetable oil
1 (14 ounce) can french-style green beans
1 (14 ounce) can sliced carrots
1 (14 ounce) can chopped canned tomatoes
1 -2 large potato, cut into cubes
1 cup uncooked rice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup water
1/2 cup finely-shredded cheddar cheese

Steps:

  • Cut chicken into bite-size pieces.
  • Heat oil in large skillet over medium heat.
  • Add chicken and onion.
  • Sautee for about 3 minutes.
  • Add green beans, undrained tomatoes, carrots, potatos, rice, salt and pepper.
  • Mix gently.
  • Pour water over top of chicken mixture.
  • Cook, covered, over medium-low heat for 20 minutes or until potatoes and rice are tender.
  • Sprinkle chicken mixture with cheddar cheese.
  • Let stand, covered, for 5 minutes.
  • Enjoy!!!!!!!! :)
  • **NOTE:You can speed cooking by using cubed canned potatoes andinstant rice.
  • Add the potatoes and rice to skillet; bring to a boil and remove from heat.
  • Let stand, coveredm for 5 minutes.
  • Proceed as recipe directs.

Tips:

  • Use bone-in, skin-on chicken thighs: The bones and skin add flavor and moisture to the dish. If you don't have bone-in, skin-on chicken thighs, you can use boneless, skinless chicken thighs, but the dish will be less flavorful.
  • Brown the chicken thighs well before adding the other ingredients: This will help to seal in the juices and prevent the chicken from becoming dry. Sear the chicken over medium-high heat for 3-4 minutes per side.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the chicken will not brown evenly and will be more likely to become dry. Cook the chicken in batches if necessary.
  • Use a variety of vegetables: This will add flavor, color, and nutrients to the dish. Some good vegetables to use include potatoes, carrots, onions, celery, and green beans.
  • Season the dish well: Use a variety of spices and herbs to season the chicken and vegetables. Some good options include salt, pepper, garlic powder, onion powder, paprika, and thyme.
  • Serve the dish with a side of rice or bread: This will help to soak up the delicious sauce.

Conclusion:

Country chicken skillet supper is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of chicken, vegetables, and sauce is flavorful and satisfying, and the dish can be easily customized to your liking. Whether you serve it with rice, bread, or mashed potatoes, country chicken skillet supper is sure to be a hit with your family and friends.
