1/2 cup red bell pepper, chopped
1/2 cup celery, thinly sliced
3 tablespoons all-purpose flour
1/2 cup chicken broth
1/2 cup half-and-half
1 teaspoon dried thyme leaves
1/2 teaspoon rubbed sage
1 cup white pearl onion, frozen
1/2 cup frozen corn
pie crust, 10 inch

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 10-inch deep dish pie plate or three 4-inch ramekins with nonstick cooking spray.
  • Melt margarine in large deep skillet over medium-high heat.
  • Add chicken; cook and stir 3 minutes or until no longer pink in center.
  • Sprinkle with salt.
  • Add beans, bell pepper and celery; cook and stir 3 minutes.
  • Sprinkle flour evenly over chicken and vegetables; cook and stir 1 minute.
  • Stir in broth, half-and-half, thyme and sage; bring to a boil over high heat.
  • Reduce heat to low and simmer 3 minutes or until sauce is very thick.
  • Stir in onions and corn.
  • Return to a simmer; cook and stir 1 minute.
  • Pour into pie crust.
  • Bake 20 minutes or until crust is light brown and mixture is hot and bubbly.
  • Let stand 5 minutes before serving.

Tips:

  • Prep Ahead: Make the chicken filling and pie crusts in advance and store them separately in the refrigerator or freezer. This will save time when you're ready to assemble and bake the pies.
  • Use a Variety of Vegetables: Feel free to mix and match different vegetables in your filling. Some popular options include carrots, celery, peas, corn, and green beans.
  • Season to Taste: Be sure to taste the filling before baking the pies and adjust the seasoning as needed. You may want to add more salt, pepper, or herbs.
  • Don't Overfill the Pies: Be careful not to overfill the pie crusts, or they may burst during baking. Leave about 1/2 inch of space at the top of each pie.
  • Brush with Milk or Egg Wash: Before baking, brush the tops of the pies with milk or egg wash to give them a golden brown crust.
  • Bake Until Golden Brown: Bake the pies until the crusts are golden brown and the filling is bubbling. This usually takes about 30-35 minutes.
  • Let Cool Before Serving: Let the pies cool for at least 15 minutes before serving. This will help the filling to set.

Conclusion:

These Country Chicken Pies are a delicious and comforting dish that is perfect for a family meal. With their flaky crust, savory filling, and creamy gravy, these pies are sure to be a hit. So next time you're looking for a hearty and satisfying meal, give this recipe a try. You won't be disappointed!
