Number Of Ingredients 12

1 lb ground beef
1/4 c onion, diced
2 can(s) cream of celery soup
3 c tomato juice
2 c carrots, grated
1 c water
1 bay leaf
1/2 tsp sugar
1/2 tsp dried marjoram
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp pepper

Steps:

  • 1. In large pan over meduim heat, brown beef and onion; drain.
  • 2. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until carrots are tender. Remove bay leaf.

Tips:

  • Choose the right carrots: Look for carrots that are firm, smooth, and have a deep orange color. Avoid carrots that are wilted, cracked, or have blemishes.
  • Clean the carrots thoroughly: Scrub the carrots well under running water to remove any dirt or debris. Peel the carrots if desired, but you can also leave the skin on for added nutrients.
  • Use a variety of vegetables: Don't just limit yourself to carrots! Feel free to add other vegetables to your soup, such as celery, onions, potatoes, or parsnips. This will give your soup more flavor and texture.
  • Don't overcook the vegetables: Cook the vegetables until they are tender but still have a bit of a bite to them. Overcooked vegetables will lose their flavor and nutrients.
  • Season to taste: Season your soup with salt, pepper, and other herbs and spices to taste. Common additions include garlic, thyme, rosemary, and paprika.
  • Garnish before serving: Before serving, garnish your soup with a dollop of sour cream, a sprinkle of fresh herbs, or a drizzle of olive oil. This will add a touch of extra flavor and visual appeal.
