2 cups granulated sugar
1 cup butter (, room temperature)
2 large eggs
6 apples (,small/medium size, grated (cored, but keep the peel on))
2 teaspoons baking soda
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 cup chopped walnuts (, optional)
1 cup heavy whipping cream
1/2 cup light brown sugar
1/2 cup granulated sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together the butter and sugar until well blended. Add the eggs and mix well.
  • Stir in the freshly grated apple. It may seems like the grated apple is completely taking over the dish - this is a good thing :).
  • In a separate bowl, mix together the dry ingredients. Add to the wet ingredients and mix, just until incorporated.
  • Bake in a greased 9x13 inch pan for 40-50 min, or until a toothpick inserted in the center of the cake comes out clean. (Depending on how large your apples were, you may need to cook it a little longer than 50 minutes).

1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 cup all-purpose flour
1/2 teaspoon baking soda

CARAMEL SAUCE:
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/2 cup light corn syrup

1/4 cup butter, cubed
1/4 teaspoon salt
1 large egg, lightly beaten

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, nutmeg and cinnamon; gradually add to creamed mixture and mix well. Stir in apples and walnuts. , Pour into a greased 8-in. square baking dish. 2 cups sugar
2 large eggs
2 cups (about 2 apples) grated unpeeled Granny Smith apple (see Cook's Note)
2 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/4 teaspoon kosher salt
1 cup chopped walnuts (optional)
Homemade Caramel Sauce, recipe follows
Whipped cream or ice cream (optional)
1 cup packed light brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch of kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Beat the butter with a mixer at medium speed until fluffy; gradually add the sugar, beating well. Add the eggs, 1 at a time, beating just until blended after each addition. Add the apple, beating just until blended.
  • Whisk together the flour, baking soda, cinnamon, cloves and salt; add to the butter mixture, and mix just until blended. Stir in the walnuts, if desired.

3 cups plus 2 tablespoons all-purpose flour
2 cups granulated sugar
1 1/2 cups vegetable oil
3 large eggs
1/2 cup orange juice
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 to 2 1/2 cups peeled, cored and finely diced sweet apples
1 cup walnuts, finely chopped
3/4 cup granulated sugar
6 tablespoons (3/4 stick) unsalted butter
1/3 cup buttermilk
1/2 teaspoon baking soda

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
  • Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
  • Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
  • For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
  • Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.

2 Tbsp oil
2 eggs
1 15,4 oz. pkg. pillsbury nut quick bread and muffin mix
3 c apple pie filling (from two 21 oz. cans)
2 tsp nutmeg and 2 teaspoons cinnamon
1/2 c chopped walnuts
sauce and topping:
1/2 c sugar
1/2 c firmly packed brown sugar
1/2 c butter
1/2 c whipping cream
1 tsp vanilla
vanilla ice cream or whipped cream if desired

Steps:

  • 1. HEAT oven to 350°F. Spray 13 x 9-inch pan with no-stick cooking spray. Combine oil and eggs in large bowl; beat well. Add quick bread mix, apple pie filling, cinnamon and nutmeg; stir 50 to 75 strokes with spoon until mix is moistened. Stir in nuts from foil packet and 1/2 cup chopped walnuts. Spoon into prepared pan; spread evenly.
  • 2. BAKE 43 to 50 minutes or until cake is deep golden brown and toothpick inserted in center comes out clean. Cool 30 minutes while making sauce.
  • 3. COMBINE sugar, brown sugar, butter and cream in medium saucepan; mix well. Bring to a boil, stirring occasionally. Remove from heat; stir in vanilla.

200g granulated sugar
100ml vegetable oil
175g plain flour
2 tbsp cocoa powder
1 tsp baking powder
½ tsp cinnamon
½ tsp mixed spice
½ tsp ground ginger
5 eating apples , peeled, cored and diced, about 600g
1 tsp each icing sugar and ground cinnamon, for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
  • Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
  • Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.

2 1/2 cups cooking apples, chopped medium coarse (such as Granny Smith or Northern Sprys)

  • The cake gets better as it ages, keeps for a week in the refrigerator, and also freezes well.
  • It can be reheated in the microwave.
