Yield 6

Number Of Ingredients 15

1 pound lean ground beef
1 onion, diced
3 carrots, diced
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon Italian seasoning
2 tablespoons chopped fresh parsley
1 ½ cups beef broth
1 tablespoon tomato paste
salt and pepper to taste
4 potatoes, peeled and diced
¼ cup butter, softened
1 cup milk
salt and pepper to taste
¼ pound shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • To Make Meat Filling: Place a large skillet over medium heat. Crumble in ground beef and saute 1 minute. Add onion and carrot, then continue to saute until meat is no longer pink and onion begins to brown, about 5 minutes. Mix in flour, cinnamon, mixed herbs, and parsley.
  • In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add salt and pepper to taste. Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a 9 inch pie plate.
  • To Make Potato Topping: Place diced potatoes in a medium saucepan. Cover with water and place over high heat. Allow to come to a boil. Boil for 15 minutes, or until potatoes are tender. Drain.
  • Mash potatoes until smooth, then add butter or margarine, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.
  • Bake in preheated oven for 25 minutes, until top is browned and cheese is bubbly.

Time 1h5m

Yield 4 servings

Number Of Ingredients 21

1 tablespoon butter (14 grams)
1 carrot, peeled and diced
1 stalk celery, diced
1 small yellow onion, finely diced
Kosher salt and freshly ground black pepper
1 garlic clove, finely minced
340 to 350 grams lean ground beef or plant-based beef alternative (about 12 ounces)
1/2 cup canned lentils, rinsed and drained
1 tablespoon all-purpose flour (8 grams)
1 tablespoon tomato paste (15 milliliters)
1 tablespoon Worcestershire sauce (15 milliliters)
3/4 cup mushroom broth or low-sodium beef broth (190 milliliters)
1/2 cup frozen peas and/or corn (65 grams)
2 large yellow flesh potatoes, peeled or unpeeled, halved lengthwise and quartered
1 garlic clove
Kosher salt
1/4 small head cauliflower, cut into florets
2 tablespoons 2% or whole milk (30 milliliters)
2 tablespoons butter (28 grams)
2 tablespoons cream cheese, at room temperature (28 grams)
1 cup grated Cheddar, optional (100 grams)

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • For the filling: Melt the butter in a large oven-safe skillet over medium heat. Add the carrots, celery and onion and season with salt and pepper. Cook, stirring frequently, until the vegetables begin to soften, about 6 minutes. Add the garlic and cook for 30 seconds. Add the beef or meat alternative. Increase the heat to medium-high and cook, breaking up the beef or meat alternative, until browned and cooked through, 5 to 7 minutes. Reduce the heat to medium, add the lentils and sprinkle with the flour; stir to combine.
  • Whisk together the tomato paste and Worcestershire sauce in a medium bowl. Whisk in the mushroom or beef broth and add to the pan, scraping any stuck-on bits off the bottom of the pan. Bring to a boil, season with more salt and pepper if needed, then reduce the heat to low and simmer while you prepare the topping.
  • For the topping: Cover the potatoes and garlic with a few inches of cold water into a large pot. Season well with salt and bring to a boil over medium-high heat. Once boiling, add the cauliflower, cover and cook until tender, 10 to 15 minutes. Drain and return to the pot. Using a potato masher or hand mixer, roughly mash the veg. Add the milk, butter and cream cheese and mash until the desired texture is reached. Season with more salt.
  • Stir the frozen veg into the filling and remove from the heat. Top with the mash, spreading it into an even layer and scatter with the grated Cheddar. Transfer the pan onto a rimmed baking sheet just in case there is any bubble over and bake for until the cheese is melted and the top is lightly golden brown and crisp, 20 to 25 minutes.
  • Allow the pie to cool slightly before serving.

COTTAGE PIE WITH A BIT OF ZING

Cottage Pie With a Bit of Zing image

Created for RSC #9. We love Cottage Pie at our house, it's comfort food. This recipe has an additional umph of protein with the addition of lentils, and a bit of zing courtesy of a jalapeno pepper.

Provided by Mirj2338

Categories     Savory Pies

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 18

1 1/2 lbs ground beef
1 tablespoon olive oil
1/2 cup brown lentils (they look green to me)
2 medium tomatoes, finely chopped
4 carrots, peeled and finely grated
1 large white onion, finely chopped
2 eggs, lightly beaten
1 jalapeno pepper, deseeded carefully
1 tablespoon soy sauce
1 tablespoon sweet paprika
salt
fresh ground black pepper
3 white potatoes, peeled and cut into 2 inch cubes
1/4 cup margarine
1 egg, lightly beaten
salt
fresh ground black pepper
sweet paprika, for dusting

Steps:

  • Preheat the oven to 350°F
  • In a large skillet, brown the ground beef in the olive oil.
  • While you are busy with the ground beef, cook the lentils in water over high heat until soft, about 15 minutes. Test to make sure they are soft, there's not much worse then biting into a hard lentil while eating comfort food.
  • While you are doing this you might as well jump ahead a bit in the ingredient list and cook up the potatoes in a separate pot of water until they are soft (do the fork test).
  • In a large bowl, mix the browned ground beef with the cooked lentils.
  • Add the tomatoes, carrots and white onion.
  • Add the beaten eggs to the mixture.
  • Add the jalapeno pepper. You can add as much or as little as you like, depending on how much zing you want in your pie.
  • Add in the soy sauce, salt and pepper and paprika to taste.
  • Mix everything until it's well combined.
  • Grease a 9x13 inch baking dish and pat the meat mixture down into the dish.
  • Take the cooked potatoes and mash them together with the margarine, egg, salt and pepper. Do this quickly so the hot potatoes don't cook the egg before it has a chance to be incorporated.
  • Spread the mashed potatoes over the meat mixture. Use your fork and make a pretty design in the mashed potatoes, and dust with sweet paprika.
  • Place the pie in the oven and bake for about 50 minutes. The top should be a lovely brown and crispy color (can color be crispy?).
  • This is almost a complete meal, you really just need a green vegetable or salad on the side.

Tips:

  • Choose high-quality ingredients: Use fresh, flavorful vegetables, high-quality ground beef, and a rich, flavorful gravy.
  • Don't overcook the meat: Cook the ground beef until it is just cooked through. Overcooking will make it tough and dry.
  • Make a flavorful gravy: Use a combination of beef broth, red wine, and Worcestershire sauce to create a rich, flavorful gravy. You can also add herbs and spices to taste.
  • Use a variety of vegetables: Don't be afraid to experiment with different types of vegetables in your cottage pie. Some good options include carrots, peas, corn, and green beans.
  • Top with a cheesy mashed potato crust: A creamy, cheesy mashed potato crust is the perfect finishing touch for a cottage pie. Be sure to use a good quality cheddar cheese that melts well.
  • Let the cottage pie rest before serving: Let the cottage pie rest for at least 15 minutes before serving. This will allow the flavors to meld and the pie to set.

Conclusion:

Cottage pie is a classic comfort food that is easy to make and loved by people of all ages. With its flavorful ground beef filling, creamy mashed potato crust, and hearty vegetables, it's sure to be a hit at your next family meal. So next time you're looking for a delicious and satisfying dish to make, give cottage pie a try. You won't be disappointed!
