1 english muffins, halved & toasted
6 slice turkey breast, smoked & thin sliced
2 tomato slices, (1/4 inch thick)
1/2 c cottage cheese, lowfat
pepper, to taste
1 tsp chives, dried

Steps:

  • 1. Top each of the muffin half with 3 turkey slices, 1 tomato slice & 1/4 cup cottage cheese.
  • 2. Then Sprinkle evenly with the black pepper & chives.
  • 3. Special Tip: You may use sliced green onions for the chives.

1/2 cup flour (any kind will do)
1/4 teaspoon salt
1 teaspoon baking powder
1 egg, beaten
1/2 cup cottage cheese, low-fat
1 tablespoon vegetable oil
1 tablespoon honey
1 tablespoon sugar (as much or little as you desire)

Steps:

  • Preheat oven to 400 deg F/200 deg Celsius.
  • Grease muffin pan/line with muffin cups.
  • Mix flour, salt and baking powder together.
  • In a separate bowl, beat the egg and then beat in cottage cheese. Stir in vegetable oil and honey. Mix well.
  • Add wet ingredients into dry ingredients. Mix lightly with a fork. Do not overmix; batter should still be lumpy.
