COTTAGE CHEESE ONION MUFFINS

Cottage Cheese Onion Muffins image

This recipe comes from The Original Vidalia Onion Cookbook that I received years ago with a gift box of Vidalia onions. While I haven't made these muffins yet, I love muffins and this sounds like something that would be great with a steak dinner. I'm posting it here since I always forget to dig through my cookbooks now that there are so many great recipes online.

Healthy Cottage Cheese Muffins image

With little oil and sugar and plenty of cottage cheese! This recipe only makes 6 small muffins, so double/triple/quadruple it as you like. I found it funny that no one had posted any cottage cheese muffins. From http://thepioneerwoman.com/tasty-kitchen/recipes/breads/cottage-cheese-muffins/.

Time 25m

Yield 6 muffins, 4-6 serving(s)

Number Of Ingredients 8

1/2 cup flour (any kind will do)
1/4 teaspoon salt
1 teaspoon baking powder
1 egg, beaten
1/2 cup cottage cheese, low-fat
1 tablespoon vegetable oil
1 tablespoon honey
1 tablespoon sugar (as much or little as you desire)

Steps:

  • Preheat oven to 400 deg F/200 deg Celsius.
  • Grease muffin pan/line with muffin cups.
  • Mix flour, salt and baking powder together.
  • In a separate bowl, beat the egg and then beat in cottage cheese. Stir in vegetable oil and honey. Mix well.
  • Add wet ingredients into dry ingredients. Mix lightly with a fork. Do not overmix; batter should still be lumpy.
  • Pour batter into muffin cups.
  • Sprinkle some sugar onto the tops of the unbaked muffins.
  • Bake for 15-20 minutes, or until knife to the center comes out clean, or until golden brown.
  • Remove from oven immediately and place on wire rack.
  • Immediately sprinkle some sugar onto the tops of the muffins and allow to rest for 5-10 minutes.
  • Note: The muffins themselves are not very sweet, so the sugar should be added according to how sweet you like your food.

Tips:

  • Use fresh, high-quality ingredients for the best flavor and texture.
  • Be sure to drain the cottage cheese well before using to avoid excess moisture in the muffins.
  • Grate the onion finely to evenly distribute its flavor throughout the muffins.
  • Use a light hand when mixing the batter to avoid overworking the gluten, which can result in tough muffins.
  • Fill the muffin cups about 2/3 full to allow room for the muffins to rise.
  • Bake the muffins until a toothpick inserted into the center comes out clean.

Conclusion:

Cottage cheese onion muffins are a delicious and versatile breakfast or snack option. They are easy to make and can be tailored to your own taste preferences. Try adding different herbs, spices, or vegetables to the batter for a unique twist. These muffins are also a great way to use up leftover cottage cheese. Enjoy!
