COTTAGE CHEESE OATMEAL PUDDING

Cottage Cheese Oatmeal Pudding image

Creamy pudding with a hint of nutmeg for Breakfast. The taste of this kinda reminds me of rice pudding but with a texture kinda of cooked a cream of wheat pudding. I found this recipe in The Breakfast Book. When I made this recipe I had to make it in 2 batches due to my food processor being so small, so I mixed everything in a bowl before pouring into my baking dish. I did also add a scoop of vanilla protein powder. When I pulled this from the oven 40 minutes later this was like soup so I quickly mixed in 1/2 cup flour which did the trick and made this like a pudding. Next time I'll add the flour right from the start.

COTTAGE CHEESE CHOCOLATE PUDDING - HIGH PROTEIN

Cottage Cheese Chocolate Pudding - High Protein image

A high protein pudding with a «chocolate-cheesecake» taste ! I modify this recipe by changing the cocoa by a teaspoon of hot chocolate preparation (Nestle Carnation Hot Chocolate Light) and it makes it less bitter.

This is a nice and easy way to serve oatmeal. It's very moist and tasty, even my children love to eat this one. Use other dried fruits for a different taste. This recipe comes from a local Toronto paper, yeeeeears ago.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your oatmeal pudding will be.
  • Adjust the sweetness to your liking. If you find the oatmeal pudding too sweet, you can reduce the amount of maple syrup or honey. You can also add a pinch of salt to balance out the sweetness.
  • Make it ahead of time. Oatmeal pudding is a great make-ahead breakfast or snack. You can make it the night before and store it in the refrigerator overnight. In the morning, just grab a bowl and enjoy!
  • Get creative with your toppings. Oatmeal pudding is a blank canvas for your favorite toppings. Try adding fresh fruit, nuts, seeds, or a dollop of yogurt. You can also drizzle it with maple syrup or honey.

Cottage cheese oatmeal pudding is a delicious, healthy, and filling breakfast or snack. It's easy to make and can be customized to your liking. So next time you're looking for a quick and easy breakfast or snack, give cottage cheese oatmeal pudding a try!
