COTTAGE CHEESE MEATLOAF FROM 1968
The recipe comes from the Sunset Ground Beef Cookbook 1968 and has been one of our all-time favorite meatloaf recipes because of the taste as well as how quickly everything is put together and baked. To up the taste I have included 1 clove of garlic minced. It's a very light textured meatloaf in a shallow pan instead of the typical loaf pan style. I am mostly putting this recipe here for safekeeping since my book is getting more and more stained after 4 decades of use. I normally eat this meatloaf with a side of ketchup and I suppose I should come up with a topping that goes on before Parmesan cheese but haven't done that yet. There is already a very similar recipe posted on zaar that uses a microwave to cook the meat.

ITALIAN MEATLOAF BY B H & G

Tips:
- Use a variety of meats. This recipe calls for ground beef, but you can also use ground turkey, chicken, or pork. Or, try a combination of different meats.
- Add some veggies. Grated carrots, zucchini, or onion are all great additions to meatloaf. They add flavor and moisture, and they help to keep the meatloaf from drying out.
- Use fresh herbs and spices. Dried herbs and spices are fine, but fresh ones will give your meatloaf a much more flavorful boost. Try adding thyme, rosemary, sage, or basil.
- Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough. Just mix the ingredients until they are combined.
- Cook the meatloaf in a loaf pan. This will help to keep the meatloaf moist and prevent it from falling apart.
- Let the meatloaf rest before slicing. This will help the juices to redistribute throughout the meatloaf, making it more flavorful and easier to slice.
Conclusion:
Cottage cheese meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover meat and vegetables. So next time you're looking for a quick and easy dinner recipe, give cottage cheese meatloaf a try!
