2/3 cup cottage cheese
1 teaspoon vanilla extract
2 teaspoons vegetable oil
3 teaspoons sugar
2 eggs
1/2 cup applesauce
ground cinnamon, for dusting

Steps:

  • In a blender, combine all ingredients, except applesauce and cinnamon.
  • Blend until smooth.
  • Pour mixture onto a nonstick skillet, making 8 pancakes.

1/2 cup whipping cream
1/2 grated lemon, zest of

8 ounces farmer cheese
3 tablespoons Smart Balance light butter spread, melted
1 teaspoon vanilla extract

1/3-1/2 cup matzo meal
canola oil, for frying

  • Beat in the farmer cheese.
  • Add the butter, vanilla extract, and salt.
  • Slowly stir in enough matzo meal to make a batter that holds together.
