1 1/2 cup(s) boiling water
1 cup(s) large curd cottage cheese
1 tablespoon(s) lemon juice
1 cup(s) coarsely grated carrots
1/2 cup(s) chopped pecans
1 package(s) jell-o orange or lime

Steps:

  • Dissolve jell-o gelatin and salt in boiling water.
  • Add cottage cheese and lemon juice chill until very thick.
  • Fold in grated carrots and pecans.
  • Pour into 1 quart mold chill until firm unmold.
