BROCCOLI & COTTAGE CHEESE CASSEROLE

Broccoli & Cottage Cheese Casserole image

I found this recipe in a cookbook given to me for Christmas called "Irish Cooking". The casserole is really simple to make, and it has an almost quiche-like texture to it. The original recipe called for regular cottage cheese, but we actually had FAT FREE on hand. I don't think it took away from the flavor of the dish at all. This dish might also be nice served at brunch or breakfast.

LAYERED MEAT AND COTTAGE CHEESE MACARONI CASSEROLE

Layered Meat and Cottage Cheese Macaroni Casserole image

This is great to take to potlucks, you can prepare the complete casserole and refrigerate until ready to bake, adjust all seasonings to suit taste. To save time you can cook the sauce up to 48 hours in advance, in fact I advise to do so this will allow the flavors will blend together. If you prefer creamier layers increase the cottage cheese to 4 cups. Prep time does not include cooking the tomato sauce.

BUCKWHEAT AND COTTAGE CHEESE CASSEROLE

Buckwheat and Cottage Cheese Casserole image

From: "Whole Grains Every Day, Every Way" by Lorna Sass. "The savory combination of buckwheat and cottage cheese shows up in many traditional Russian cookbooks, and creates the kind of dense, comforting pudding that we yearn for when there's frost on the windows. Use toasted buckwheat (kasha) for a robust flavor, and untoasted buckwheat for a subtler dish. Serve the casserole as an accompaniment to brisket, pot roast, or short ribs. Vegetarians will enjoy it as an entree."
