COTTAGE CHEESE BREAD
I got this recipe from a lady who was a member of an online cooking group I belonged to. I was skeptical of using the cottage cheese, but the finished product changed my mind.

Steps:
- 1. Place all ingredients in bowl of Kitchen Aid. Using dough hook, stir and knead 10-15 minutes on slow to medium speed. Use up to 1/2 cup more flour if dough seems too sticky.
- 2. Put bowl in warm place and allow dough to raise until double, about 30 minutes.
- 3. Prepare two 9" x 5" bread pans by either greasing or spraying with cooking spray. Set aside.
- 4. When dough has doubled in size, punch down and shape into loaves. Place dough into prepared bread pans and allow to raise until just above the edge of the pan.
- 5. Put pans in preheated 350^ oven and bake approximately 40 minutes until golden brown and sound hollow when tapped. Remove from oven and allow to sit in pans about 5 minutes before removing to cooling rack.
- 6. NOTE: This was originally a bread machine recipe but I found that it produces too much dough and raises way too much to be prepared in bread machine. You can use the bread machine for the mixing/kneading, if desired, and then treat like a traditional loaf of bread to bake. I have baked in bread pans and also shaped into an oblong loaf on a baking sheet to resemble a loaf of French bread. Both methods turn out well.
COTTAGE CHEESE BREAD
just a little something different. prep time doesn't include rising time. In the directions I didn't specify kneading. there are 2 schools of thought on this subject. I leave that up to your personal preference. I knead this type of bread but i've know people who don't. As long as the bread gets a good double in size rise you should have good results. You can either use dried herbs or fresh. I prefer fresh but have had good results with the dried. Just remember dried herbs tend to have a more concentrated flavor so you may what to cut back on the amount a bit if using dried herbs.

- soften yeast in warm water.
- bring butter, cheese and egg to room temperature mix all ingredients except flour. add yeast to this mixture and mix well.
- gradually add enough flour to make a firm dough.
- cover and let rise 1 hr or until doubled.
- punch down and put in a well buttered 1 1/2 qt casserole. cover and let rise 30 minutes.
- bake at 350 degrees F for about 40 minutes.
- turn out and brush with butter and sprinkle with coarse salt. serve warm or cold.
