Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

PORK
5 lb pork roast
3 c coke
8 oz can tomato sauce
1/2 c brown sugar
1 Tbsp cayenne pepper
6 clove garlic
2 large carrots grated
2 small jalapeno pepper seeded and diced
1 medium onion chopped
1 cup coke and 1/2 cup sugar
COSTA VIDA RICE
2 c jasmine rice
32 oz chicken broth
1 Tbsp better than bouillon chicken bouillon
1 c cilantro chopped
4 green onions chopped
2 limes juiced
salt to taste

Steps:

  • 1. For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
  • 2. For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
  • 3. Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.

(6 pounds) Pork butt/shoulder
(1) 19oz. Red Enchilada Sauce
(1 can) Dr. Pepper or 20oz
(1 tsp.) Salt
(1/4 tsp.) Garlic Salt
(1 1/2 cup) Brown Sugar
(1 Tbsp) Fresh Cilantro

Steps:

  • Wrap meat in foil. Put in roasting pan and bake at 275 degrees for 5 hours. Pull the meat out and let it cool for 30 minutes then shred. In separate bowl, mix the enchilada sauce, Dr. Pepper, salt, garlic salt, brown sugar and chopped cilantro. Pour over meat and mix.
