Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

3 cups water
4 cubes chicken bouillon (or just replace water with chicken broth)
1 can green chilies
1 1/2 cups rice
4 tsp minced garlic
1/2 bunch cilantro, chopped
1/2 cup green onion, chopped

Steps:

  • Add all together, bring to a boil, turn down temperature and simmer 10-15 minutes. Serve with Pork Barbacoa and Sweet Black Beans.

Tips:

  • Use day-old rice: This will help the rice to be less sticky and clump together.
  • Rinse the rice thoroughly before cooking: This will remove any starch and help the rice to cook evenly.
  • Use a heavy-bottomed pot: This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the water to a boil before adding the rice: This will help to prevent the rice from sticking to the pot.
  • Cook the rice over low heat: This will help the rice to cook evenly and prevent it from becoming mushy.
  • Let the rice rest for 5 minutes before serving: This will allow the rice to absorb any remaining moisture and fluff up.
