16 ounces shredded beef, prepared as indicated by this recipe
12 pack of Mission Yellow Corn tortillas (you can use other ones, but these are the only ones approved by my tico husband!)
1 Package of frozen, thin-cut french fries
Vegetable oil
1 head of cabbage
Ketchup
Mayonnaise
Toothpicks
Tongs
A frying pan or deep stock pot for frying
Paper towels
2 plastic baggies

Steps:

  • Using a cheese grater or food processor, shred the cabbage and set aside.
  • If you have them, fill two thin- tipped squeeze bottles with mayonnaise and ketchup. Otherwise, add about 1/4 cup of each condiment to two plastic sandwich baggies and cut the tips off.
  • In a frying pan (I used a deep stockpot) place enough oil to cover the tacos and heat to 365 degrees Fahrenheit.
  • While the oil is getting to the right temperature, heat 8 tortillas up in the microwave for a few seconds to soften.
  • Place a tortilla on a flat work surface. Add 1-2 ounces of shredded beef to the top of the tortilla and roll it up. I place one or two toothpicks through the entire thing in order to hold it together during the frying process. Set aside and repeat.
  • Before frying the tacos, I place a plate with a paper towel nearby to absorb excess oil. Place the tacos in the pan, two at a time, and fry until golden brown. As you pull it out with kitchen tongs, tilt the taco vertically- a lot of oil will drip out, and that is good.
  • Once the tacos are fried, you can plate them and cover them with the cabbage. Set aside.
  • Fry the french fries in the same oil as the tacos. I fry them when frozen to increase the crispness. You can also bake them in the oven according to package directions.
  • Cover the taco and cabbage with french fries, and drizzle with condiments. Serve immediately- preferably with Coca-Cola or a nice cold Imperial!

1 lb beef (optional) or 1 lb poultry, cooked and shredded (optional)
salt & pepper
20 corn tortillas
hot pickled banana peppers
2 cups cabbage, shredded
1 cup diced tomato
3 tablespoons fresh coriander, chopped
2 teaspoons lemon juice, fresh
2 teaspoons olive oil
salt & pepper

Steps:

  • Cabbage Salad: Mix all the ingredients together (cabbage, tomato, coriander, salt, pepper, and olive oil).
  • Make this slaw just before serving the tortillas.
  • Place a tbsp of the shredded meat on a warm tortilla, top with the cabbage salad.
  • Top with as many hot peppers as you like.
  • Roll up and serve.
  • To go Vegetarian simply omit the beef and chicken as stated.

2 pounds peeled, deveined and quartered yuca
1/2 cup (1 stick) unsalted butter
1/4 cup plus 3 tablespoons vegetable oil
Salt
1 cup shredded mozzarella (or your choice of melting cheese)
Ensalada Criolla, recipe follows
2 tomatoes, sliced
1 large red onion, sliced
1 bell pepper, sliced
2 tablespoons chopped cilantro
Juice of 1 lime
Salt

Steps:

  • Place the peeled and quartered yuca in a pot and cover it with at least 2 quarts water. Cook over high heat until tender, about 30 minutes. Drain the yuca in a colander for 2 minutes. Transfer to the bowl of an electric mixer and add the butter, 1/4 cup of the oil and salt to taste. Mix on medium speed until well incorporated, about 3 minutes. Refrigerate until cool, 15 to 20 minutes.
  • Shape the yuca dough into eight 4-ounce balls. Make a hole in one of the balls with your finger and stuff it with a tablespoon of the mozzarella. Flatten it into a thick patty (a tortilla). Repeat with the remaining balls.
  • Heat the remaining 3 tablespoons oil in a skillet over medium heat. Add 4 yuca patties and cook until light golden brown, 1 to 2 minutes per side. Repeat with the remaining patties, adding more oil as necessary. Top the tortillas with the Ensalada Criolla.
  • Combine the tomatoes, onion and pepper in a large bowl. Add the cilantro, lime juice and salt to taste and toss. Yield: 8 servings

2 cups spaghetti sauce, homemade or prepared
1/2 cup shredded cheese, such as Cheddar or mozzarella
For the Garnishes: (use two or three of the following)
About 1 cup shredded cabbage, or iceberg lettuce, or chopped bell peppers
1/2 cup sliced nacho japapeños, 1 to 2 seeded and minced fresh chilies, 1 bunch sliced scallions (green onions), or drops of hot sauce or Tabasco
