I got this recipe from a Yahoo Group that I belong to. I liked the name and decided to give it a try. It was a hit in my house, so I thought I'd share it with all of you. Hope you like it.

Number Of Ingredients 12

2 lbs zucchini, sliced
1 lb lean ground beef
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 cup finely chopped onion
3 cups cooked rice
1 (4 ounce) can green chilies, chopped
2 eggs, beaten
1 1/2 cups cottage cheese
2 tablespoons grated parmesan cheese
2 cups grated cheddar cheese, divided

Steps:

  • Cook zucchini in salted water about 5 minutes.
  • Drain thoroughly and set aside.
  • Cook meat, seasonings, and onions until meat is no longer pink and onions are tender crisp.
  • Add rice, green chiles, and zucchini.
  • Blend eggs, cottage cheese, and parmesan cheese.
  • Stir into meat mixture.
  • Turn into two greased shallow 2 quart casseroles.
  • Top each with 1 cup cheddar cheese.
  • Bake at 350 degrees F for 30 minutes.

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

CREAMY RICE CASSEROLE

2 teaspoons butter
1 teaspoon salt
1 cup Uncle Ben's or other converted rice
1 Poblano chile
1/2 cup sour cream
1/8 cup plus 1/4 cup chopped onion
2 tablespoons chopped cilantro
Salt
1 tablespoon vegetable oil
1 garlic clove
1 cup corn kernels, fresh or frozen
1/8 cup peas, fresh or frozen
4 ounces grated Cheddar cheese

Steps:

  • Preheat oven broiler. In a small saucepan, bring 2 cups water to a boil and add butter and salt. When the butter is melted, add rice and return to a boil. Reduce heat to very low, cover rice with a tight-fitting lid, and cook 25 to 30 minutes. Spread rice on a baking sheet to cool. (To cool quickly, put the rice on the baking sheet in the freezer for 10 to 15 minutes, stirring every five minutes.)
  • Place poblano on a broiling pan about 2 inches from the broiler. Using a pair of tongs, turn poblano every 3 to 5 minutes, until blistered all over, about 15 minutes. (Alternatively, the poblano may be roasted directly over a gas flame, turning every minute until blistered all over, 3 to 5 minutes.) Transfer to a paper bag and allow to cool. Reduce oven to 350 degrees.
  • When the poblano is cool enough to handle, gently scrape away blistered outer skin and discard the top. Slice open lengthwise and gently scrape away and discard seeds. Slice lengthwise in quarter-inch strips, and cut cross-wise into quarter-inch dice. In a small bowl, combine the sour cream, 1/8 cup chopped onion, and chopped cilantro. Season with salt to taste.
  • In a skillet over medium heat, heat vegetable oil until shimmering. Add 1/4 cup chopped onion and garlic. Sauté until translucent, 1 to 2 minutes. Add diced poblano and sauté 1 minute, then remove from heat and transfer to a casserole or clay pot. Add the rice, corn, and peas. Toss lightly. Add sour cream mixture and grated cheese. Mix lightly but thoroughly. Cover the casserole or clay pot with a lid or foil; if using a Pyrex casserole, reduce oven temperature to 325 degrees. Bake until thoroughly heated, about 30 minutes. Serve with a green salad, if desired.

2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice

2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

2 tablespoons olive oil
1/2 onion, diced
2 tablespoons all-purpose flour
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup milk
2 cups shredded deli rotisserie chicken
1 cup chopped ham
2 cups cooked rice
1 1/2 cups shredded Swiss cheese (6 oz)
3/4 cup Progresso™ Italian style bread crumbs
1 tablespoon melted butter
Chopped fresh parsley for garnish, if desired

Steps:

  • Heat oven to 400°F. Lightly grease 10-inch round baking dish with olive oil; set aside.
  • In 10-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Add onion; cook until tender and translucent, stirring occasionally. Add flour; stir to make a roux. Cook roux 1 to 2 minutes or until lightly golden. Gradually beat in broth with whisk, followed by milk, and simmer until slightly thickened into a gravy.
  • In large bowl, mix chicken, gravy, ham, rice and 1 cup of the cheese. Spread evenly in baking dish.
  • In another bowl, mix bread crumbs and butter to coat well. Add remaining 1/2 cup cheese. Top casserole with bread crumb mixture; bake about 20 minutes or until top is crisp and golden and casserole is bubbling.
