CHEESY CHICKEN WRAPS

Cheesy Chicken Wraps image

Super quick and easy chicken that is easily varied! This is great to play with: add part of a ranch seasoning packet, garlic, or maybe add some scallions. You can also switch up the cheeses! Great with pepper jack cheese. When I make it fairly plain my son likes to dip the roll ups in ranch.

Time 35m

Yield 8

Number Of Ingredients 7

1 pound skinless, boneless chicken breast halves
1 ½ cups shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1 (8 ounce) package cream cheese, softened
salt and pepper to taste
1 (8 ounce) package refrigerated crescent roll dough
2 tablespoons melted butter, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Place chicken breasts into a large pot and cover with salted water by several inches; bring to a boil. Reduce heat to medium and simmer until no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from water and cool. Shred chicken using two forks.
  • Thoroughly mix Monterey Jack cheese, Cheddar cheese, cream cheese, salt, and pepper together in a bowl. Stir chicken into cheese mixture.
  • Separate crescent roll dough and lay each piece flat on a work surface. Spread chicken-cheese mixture onto each piece of dough and roll dough into crescent roll shapes. Place rolls on prepared baking sheet and brush with melted butter.
  • Bake in the preheated oven until cheese is melted and rolls are golden, 20 to 25 minutes.

Tips:

  • Choose the right tortillas: For the best corny chicken wraps, use high-quality tortillas that are soft and pliable. Corn tortillas are a good option, as they are naturally gluten-free and have a slightly sweet flavor that pairs well with the other ingredients.
  • Cook the chicken properly: The chicken should be cooked until it is cooked through but still juicy. Overcooked chicken will be dry and tough. You can cook the chicken in a skillet, in the oven, or on the grill.
  • Use fresh corn: Fresh corn on the cob is the best choice for this recipe, as it has the best flavor and texture. If you don't have fresh corn, you can use frozen or canned corn, but be sure to drain it well before using.
  • Add your favorite toppings: The possibilities are endless when it comes to toppings for corny chicken wraps. Some popular options include salsa, guacamole, sour cream, cheese, and lettuce. You can also add other vegetables, such as tomatoes, onions, and peppers.

Conclusion:

Corny chicken wraps are an easy and delicious meal that can be enjoyed for lunch, dinner, or a snack. They are perfect for busy weeknights or for a casual get-together with friends. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that everyone will love.
