SOUTHERN FRIED CATFISH

Fried catfish is a Southern tradition, along with buttermilk hush puppies and buttermilk coleslaw. Try these traditional foods together.

Provided by Mama Smith

Categories     Seafood     Fish     Catfish

Time 30m

Yield 2

Number Of Ingredients 8

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

CORNMEAL-CRUSTED CATFISH

Categories     main-dish

Time 30m

Yield 5 servings

Number Of Ingredients 12

1/2 cup whole milk
2 heaping tablespoons Miss Brown's House Seasoning, recipe follows
10 catfish filets, about 4 ounces each
Vegetable oil, for frying
2 1/2 cups finely ground yellow cornmeal
1/2 cup all-purpose flour
Lemon wedges, for serving
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Stir together the milk and 1 heaping tablespoon of the House Seasoning. Pour the milk mixture into a shallow baking dish large enough to hold the filets. Spread the filets in an even layer in the dish, turning to coat each side. Let marinate for about 1 hour in a cool place or the refrigerator.
  • Pour enough oil into a large Dutch oven to come 2 inches up the side. Clip a deep-fry thermometer to the pot and heat over medium-high heat until the thermometer reaches 370 degrees F.
  • Meanwhile, stir together the cornmeal, flour and remaining 1 heaping tablespoon House Seasoning in a paper bag. Working with a few filets at a time, remove them from the marinade, allowing any excess to drip off. Place them in the paper bag and gently turn the bag over several times until the filets are evenly coated with the cornmeal mixture. Remove the filets and place them on a baking sheet while you repeat the process with the remaining filets.
  • Working in batches, fry the filets until golden brown and crisp on the outside and moist and flaky inside, adjusting the heat to maintain temperature, about 5 minutes. Transfer to a clean wire rack set over a rimmed baking sheet to drain. Serve the filets with lemon wedges.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

Tips:

  • Choose the right catfish: For the best results, use fresh or frozen catfish fillets that are about 1 inch thick. If using frozen fillets, thaw them completely before cooking.
  • Make sure the catfish is dry before frying: Pat the catfish fillets dry with paper towels before coating them in the cornmeal mixture. This will help the coating adhere to the fish and prevent it from becoming soggy.
  • Use a large skillet or Dutch oven for frying: This will ensure that the catfish has enough room to cook evenly.
  • Heat the oil to the correct temperature before frying: The oil should be shimmering and hot enough to cause a drop of water to sizzle when dropped in. If the oil is not hot enough, the catfish will not cook properly.
  • Fry the catfish in batches: Do not overcrowd the skillet or Dutch oven with catfish fillets. Fry them in batches to prevent the oil temperature from dropping too low.
  • Cook the catfish until it is golden brown and flaky: This will take about 3-4 minutes per side.
  • Serve the catfish hot with your favorite sides: Cornmeal-mustard fried catfish is delicious served with hushpuppies, coleslaw, and tartar sauce.

Conclusion:

Cornmeal-mustard fried catfish is a classic Southern dish that is easy to make and always a crowd-pleaser. With its crispy cornmeal coating and flavorful mustard sauce, this dish is sure to be a hit at your next gathering. So next time you're looking for a delicious and easy fish recipe, give cornmeal-mustard fried catfish a try. You won't be disappointed!
