Steps:
- Peel the onions, slice them into rings. The ring should be about 1/2 inch thick. No more than 3/4 inch.
- Add buttermilk, salt, and pepper to a vessel large enough for the onions to fit in.
- Add the onions and allow at least 15 minutes for them to soak.
- Heat up a dutch oven or large wide pot to 350 degree. Keep track of temperature with a candy/fry thermometer that is attached to the side of the pot.
- You are going to work in bathes here, put no more than a few onion rings in at a time, so you don't overcrowd them or reduce the temperature of the oil too much. You can place the finished rings in a oven set to it's lowest temperature to keep warm.
- Remove one ring from the buttermilk. Allow a moment to drip. Then dredge into the flour. Flip over to cover both sides, then into the oil.
- Fry each ring for about 2 minutes or until golden brown. Flip half way through.
- Season with salt immediately when out of the oil. Place on a sheet in the oven to keep warm.
- Repeat until all the rings are done. Serve hot.

- Combine the buttermilk, 1 1/2 teaspoons salt, 1 teaspoon pepper in a medium bowl. Add the onion rings, toss well, and allow to marinate for at least 15 minutes. (The onion rings can sit in the buttermilk for a few hours.)
- In a separate bowl, combine the flour, cornmeal, 1 teaspoon salt, and 1/2 teaspoon pepper. Set aside.

- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.

- In a large bowl combine buttermilk and baking soda; season well with salt and pepper. Peel onions and slice thinly, no thicker than 1/4-inch; a mandoline works well. Add to buttermilk mixture and stir well to submerge all onions. Set aside, unrefrigerated, for 2 hours.
- In a deep-fryer or heavy, deep pot, heat at least 1 quart oil to 375 degrees F. Working in batches, place about 1/6 of flour in a large bowl. With your hands, remove about 1/6 of onions from buttermilk. Don't let the liquid run off. Add to flour and mix vigorously with your hands until onions are well-coated. Separate them by hand and lay them in a deep-fry basket. Lower into hot oil, maintaining temperature. Stir every 2 minutes. When onions are golden brown and crisp, about 6 minutes, drain on paper towels and sprinkle with salt. Keep warm in a 200 degree F oven while you finish the rest.

Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. - Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up.
