CORNMEAL-CRUSTED CATFISH

Provided by Kardea Brown

Categories     main-dish

Time 30m

Yield 5 servings

Number Of Ingredients 12

1/2 cup whole milk
2 heaping tablespoons Miss Brown's House Seasoning, recipe follows
10 catfish filets, about 4 ounces each
Vegetable oil, for frying
2 1/2 cups finely ground yellow cornmeal
1/2 cup all-purpose flour
Lemon wedges, for serving
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Stir together the milk and 1 heaping tablespoon of the House Seasoning. Pour the milk mixture into a shallow baking dish large enough to hold the filets. Spread the filets in an even layer in the dish, turning to coat each side. Let marinate for about 1 hour in a cool place or the refrigerator.
  • Pour enough oil into a large Dutch oven to come 2 inches up the side. Clip a deep-fry thermometer to the pot and heat over medium-high heat until the thermometer reaches 370 degrees F.
  • Meanwhile, stir together the cornmeal, flour and remaining 1 heaping tablespoon House Seasoning in a paper bag. Working with a few filets at a time, remove them from the marinade, allowing any excess to drip off. Place them in the paper bag and gently turn the bag over several times until the filets are evenly coated with the cornmeal mixture. Remove the filets and place them on a baking sheet while you repeat the process with the remaining filets.
  • Working in batches, fry the filets until golden brown and crisp on the outside and moist and flaky inside, adjusting the heat to maintain temperature, about 5 minutes. Transfer to a clean wire rack set over a rimmed baking sheet to drain. Serve the filets with lemon wedges.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

CORNMEAL AND FLAX-CRUSTED COD OR SNAPPER

Cornmeal and Flax-Crusted Cod or Snapper image

Fish will not absorb much of the oil in which it is fried if the oil is properly heated. These crisp fillets are a great way to work flaxseeds, toasted or not, into a main dish.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, weekday, main course

Time 5m

Yield Serves four

Number Of Ingredients 10

1 1/2 pounds snapper or cod fillets
Salt
freshly ground pepper
1/4 cup fine cornmeal (if you have only polenta or coarse cornmeal, you can grind it to a fine powder in a spice mill)
1/4 cup flaxseeds, untoasted or toasted, coarsely ground
1/4 cup all-purpose flour or rice flour
2 eggs, beaten
1/2 teaspoon freshly ground pepper
2 to 4 tablespoons canola oil
Lemon wedges for serving

Steps:

  • Heat a large, heavy cast-iron skillet over medium-high heat (unless you're planning to cook the fish later).
  • Pat the fish fillets dry, and season with salt and pepper. In a wide bowl, mix together the cornmeal, flaxseeds, and salt and pepper to taste.
  • Place the flour on a plate or in a baking dish. Beat the eggs in a wide bowl. Dredge the fillets first in the flour -- tap them to remove excess flour -- then in the egg, then in the cornmeal-flax mixture. If not cooking right away, place the fish on a baking sheet, uncovered, in the refrigerator.
  • Add 2 tablespoons canola oil to the hot pan. When it is rippling, carefully add as many fillets as will fit your pan. Cook four to five minutes on each side (depending on the thickness of the fillets) or until nicely browned. Remove from the pan, and keep warm in a low oven while you repeat with the remaining fish and oil, as necessary. Serve hot, with lemon wedges.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 35m

Number Of Ingredients 7

1/3 cup yellow cornmeal
2 teaspoons paprika
Coarse salt and ground pepper
4 (6 to 8 ounces each) skinless tilapia fillets
3 tablespoons olive oil
Spicy Black Beans, (optional)
1/2 cup prepared tomato salsa

Steps:

  • In a shallow dish, combine cornmeal and paprika; season generously with salt and pepper. Separate fillets into thick and thin sides. Dredge each piece in cornmeal mixture, patting it on to coat completely.
  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Cook as many pieces as will fit (without crowding) until golden brown and firm, about 2 minutes per side for thin pieces and 4 minutes per side for thick ones. Transfer to a plate; sprinkle with salt, if desired, and cover loosely to keep warm. Wipe skillet with a paper towel. Repeat with remaining oil and fish. Serve with Spicy Black Beans, if desired, and salsa.

Tips:

  • Choose the right fish: Firm-fleshed fish like cod, haddock, or tilapia work best for this recipe.
  • Use fresh or frozen fish: If using frozen fish, thaw it completely before cooking.
  • Make sure the fish is dry: Pat the fish fillets dry with paper towels before coating them in the cornmeal mixture. This will help the coating adhere better.
  • Use a light touch when coating the fish: Don't press the cornmeal mixture into the fish too hard, or it will fall off during cooking.
  • Use a non-stick skillet: This will help prevent the fish from sticking and breaking apart.
  • Cook the fish over medium heat: This will help prevent the fish from overcooking and drying out.
  • Flip the fish only once: Flipping the fish too often can cause it to break apart.
  • Cook the fish until it is opaque and flakes easily with a fork: The internal temperature of the fish should be 145°F (63°C).
  • Serve the fish immediately: Cornmeal-crusted fish is best served hot out of the skillet.

Conclusion:

Cornmeal-crusted fish fillets are a delicious and easy-to-make dish that is perfect for a weeknight meal. The crispy cornmeal coating adds a nice crunch to the fish, while the fish itself is flaky and tender. This recipe is also a great way to use up leftover fish fillets. Serve the fish with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad.
