CORNMEAL COATED FRIED SHRIMP

Cornmeal Coated Fried Shrimp image

We lived on the Texas Gulf Coast and my father and family shrimped and fished with a passion. Shrimp was plentiful in our home of 10 people and saved my mother money...imagine that...so we had it often. One of my favorite ways to have shrimp was simple and delicious and still the way I cook it most of the time. It may be easy,...

Provided by Kathy Sterling

Time 35m

Number Of Ingredients 6

2 lb medium shrimp, cleaned and deviened
1 c yellow cornmeal, i use quaker brand
1/2 tsp red pepper, more if you like it spicey
1 tsp salt
1 Tbsp steak seasoning, i use texjoy
2 c vegetable cooking oil or other oil for deep frying

Steps:

  • 1. Clean and de-vein shrimp. Rinse thoroughly and leave shrimp in clean water, you want the shrimp to be wet when dredging in cornmeal. In a small bowl mix cornmeal and seasonings well.
  • 2. Heat cooking oil until hot enough for deep frying. Approximately 325 degrees. If you get the oil too hot, it will make the fried shrimp a darker color.

Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter and more delicate flavor than frozen shrimp, and they hold up better to frying.
  • Use a light hand when breading the shrimp: Don't pack the breading on too thick, or it will become soggy when fried.

  • Use a high-quality oil for frying: A good quality oil, such as canola oil or vegetable oil, will help the shrimp fry evenly and prevent them from sticking to the pan.

  • Don't overcrowd the pan when frying: If you overcrowd the pan, the shrimp will not cook evenly and they will become soggy.

  • Fry the shrimp until they are golden brown and crispy: This will ensure that they are cooked through.

  • Serve the shrimp hot with your favorite dipping sauce: Cornmeal-battered shrimp are delicious served with a variety of dipping sauces, such as tartar sauce, cocktail sauce, or ranch dressing.
