½ cup unsalted butter, softened
½ cup sugar
½ cup firmly packed light brown sugar
1 egg
½ teaspoon vanilla extract
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup rolled oats
1 cup cornflakes
½ cup sweetened flaked coconut
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350° F. Line baking sheets with parchment; set aside.
  • In a large mixing bowl with an electric mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream butter; add the sugars, beating well. Add egg and vanilla; beat well.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add to the butter mixture, beating well. Stir in the oats, cornflakes, coconut, and pecans.

3 c cornflakes
1 c dry chipped coconut or angel flake
2 large eggs
1/4 tsp salt
1 tsp vanilla extract
1/2 c karo corn syrup
1/2 c granulated sugar

Steps:

  • 1. Stir together all the ingredients and drop on buttered baking sheets- use the equivalent of a heaping Tablespoon for each. Bake at 350^ for 12 minutes or until almost no print remains when touched. Remove to cool to wire rack or paper bag .

4 egg whites
1 cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
3 cups corn flake cereal
1 cup sweetened flaked coconut
½ cup chopped walnuts

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line baking sheets with parchment paper sprayed with cooking spray.
  • Beat the egg whites in a bowl with an electric mixer until they form stiff peaks. Gradually beat in the sugar, adding about 2 tablespoons at a time. Beat in the salt and vanilla extract until the mixture is glossy and holds its shape. Gently and lightly use a rubber spatula to fold the corn flakes, coconut, and walnuts into the meringue.
