2 cups (250g) plain/all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cornflour/cornstarch
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
3/4 cup (150g) light brown sugar
1/4 cup (50g) caster/granulated sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
1 cup (175g) chocolate chips, and some extra for topping
3.5 oz (100g) cornflakes
1/4 cup (30g) malted milk powder
2 tablespoons caster/granulated sugar
1/4 teaspoon salt
1/4 cup (56g) unsalted butter, melted

Steps:

  • Preheat the oven to 180C/350F/Gas 4, and line 2 baking trays with parchment paper. Set aside.
  • Roughly crush the cornflakes into smaller pieces, then stir in the malt powder, sugars, and salt. Add the melted butter and mix well.
  • Spread the cornflakes out into a thin layer onto one of the prepared baking trays, and bake for 10 - 15 minutes until crispy and golden. Let cool completely.
  • Whisk together the flour, baking powder, cornflour, baking soda, and salt. Set aside.
  • Whisk together the butter and sugar until combined. Add the egg, egg yolk, and vanilla, and mix until combined.
  • Add the dry ingredients, and mix until just combined. Fold in the chocolate chips and cornflakes.

1/2 cup butter or 1/2 cup margarine
3/4 cup brown sugar
1 large egg
1 teaspoon vanilla
1 1/4 cups flour (could use whole wheat)
1/2 teaspoon baking soda
2/3 cup corn flakes
2/3 cup chocolate chips
