CRISPY BAKED COD

This Crispy Baked Cod is flaky, golden brown and ready in less than 20 minutes!

Provided by Blair Lonergan

Categories     Dinner

Time 18m

Number Of Ingredients 8

4 cod fillets (about 6 ounces each)
4 tablespoons salted butter
½ cup all-purpose flour
½ cup cornmeal
1 tablespoon seasoned salt
¼ teaspoon garlic powder
¼ teaspoon pepper
Garnish: fresh lemon wedges; chopped fresh parsley

Steps:

  • Preheat oven to 450 degrees F. Add the butter to an 11 x 7-inch baking dish (or another similar size dish that easily holds all of your fillets). Place the dish in the hot oven, just until the butter melts (it will only take a few minutes).
  • In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture to coat on all sides, shake off excess breading, and place in the hot dish. Very carefully turn the fish to coat with butter. You can also use a spoon to drizzle the melted butter over the top of the fish.
  • Bake for 7-8 minutes. Turn the broiler to HIGH and broil the fish for 1-2 more minutes, until the top of the fish is crispy and flakes easily with a fork. Keep a close eye on the fish while it's under the broiler to make sure that it doesn't burn.
  • Squeeze fresh lemon juice over the fish and sprinkle with parsley just before serving.

Time 20m

Yield 2-4 serving(s)

Number Of Ingredients 12

1 lb cod
1 cup corn flake crumbs
1/4 cup seasoned bread crumbs
1/2 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon onion powder
1 tablespoon fresh parsley
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 large egg whites
nonstick cooking spray
lemon wedge

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the fish into 4 even pieces.
  • Pour the cornflake crumbs, bread crumbs, and the spices into a shallow, wide bowl and mix.
  • Beat the egg whites in a separate bowl and dip each piece of fish into the egg and then into the crumb mixture to coat. Repeat for each piece of fish.
  • Use non-stick cooking spray to coat a baking sheet and place the fish on the sheet and bake for 8-10 minutes, until done. Serve with lemon wedges.

Tips:

  • To ensure a crispy coating, press the cornflake crumbs firmly onto the fish fillets.
  • For a healthier version, use whole-wheat cornflakes and low-fat mayonnaise.
  • Add a sprinkle of paprika or cayenne pepper to the cornflake crumbs for a spicy kick.
  • Serve the baked cod with a side of tartar sauce, lemon wedges, and a fresh green salad.
  • If you don't have cornflakes, you can use crushed crackers or bread crumbs instead.
  • Be sure to adjust the baking time depending on the thickness of your fish fillets.
