1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.

1 tablespoon vegetable oil
¾ onion, chopped
3 (2.5 ounce) packages deli-sliced corned beef (such as Buddig ®), diced
2 (8 ounce) packages cream cheese, softened
1 ½ cups mayonnaise
1 (8 ounce) carton sour cream
1 cup shredded Swiss cheese
1 teaspoon garlic powder
1 (1 pound) loaf unsliced Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a skillet over medium heat. Cook and stir onion until tender, 5 to 7 minutes.

1 1/2 lbs rye bread (baguettes, party, or loaf sliced)
8 ounces swiss cheese (shredded or grated)
2 ounces corned beef (diced or in strips)
2 tablespoons butter (softened)
1 -2 tablespoon prepared mustard (optional)

Steps:

  • preheat oven to 400F.
  • Slice bread into 20 pieces. If using a 1.5 loaf, slice into 3/4" to 1" slices and cut those in half.
