Number Of Ingredients 6

4 large russet potatoes
1 medium yellow onion, chopped
1 Tbsp salt
1 Tbsp black pepper
12 oz can of corned beef
1 1/2 c dark roux

Steps:

  • 1. Peel and dice potatoes, set aside.
  • 2. In a large Dutch Oven pot, bring roux and 8 cups of water to a boil. Roux will dissolve into the water as it heats. Note: You can use bottled Roux or look for my Microwave Roux recipe.
  • 3. Add onions, salt, pepper, corned beef and bring to a medium boil. Gravy should be a little on the thick side.
  • 4. Stir in potatoes and simmer until potatoes are tender, about 25 minutes.
  • 5. If gravy is too thick, add more water or for thicker gravy, add more dark roux.
  • 6. Note: If your gravy is not a milk chocolate color, stir in some Kitchen Bouquet to darken and add flavor.

DELUXE CORNED BEEF HASH

Deluxe Corned Beef Hash image

I purposely cook a whole corned beef just to make hash. There's nothing like the taste of fresh versus canned hash. This is also good for leftover St. Paddy's Day corned beef. I throw the carrot in for color, claiming it's the Leprechaun's gold. Serve with fried eggs and brown soda bread (farls).

Tips:

  • Choose the right corned beef: Look for a brisket cut that is well-marbled with fat, as this will help keep the hash moist and flavorful.
  • Cook the corned beef properly: Corned beef can be cooked in a variety of ways, but the most common method is to boil it. To boil corned beef, place it in a large pot and cover it with water. Bring the water to a boil, then reduce the heat to low and simmer for about 3 hours, or until the corned beef is tender.
  • Use a variety of vegetables: Hash is a great way to use up leftover vegetables, so feel free to add whatever you have on hand. Some good options include potatoes, carrots, celery, onions, and peppers.
  • Don't overcook the vegetables: The vegetables in hash should be cooked until they are tender, but not mushy. Overcooked vegetables will make the hash soggy.
  • Season the hash to taste: Hash is a versatile dish that can be seasoned to your liking. Some common seasonings include salt, pepper, garlic powder, and onion powder.

Conclusion:

Corned beef hash stew is a hearty and flavorful dish that is perfect for a winter meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your hash with lots of vegetables or a little bit of spice, there is a recipe out there that is sure to please you.
