8 ounces cooked corned beef, diced
1 white onion, finely chopped
1 bell pepper, finely chopped
2 medium baking potatoes, peeled and shredded (about 2 cups)
4 tablespoons unsalted butter
4 large eggs
Kosher salt and freshly ground pepper
4 slices cheddar cheese (about 2 ounces)

Steps:

  • Heat the oil in a medium skillet over high heat. Add the corned beef and cook, stirring with a wooden spoon, until it releases some fat and browns slightly, about 3 minutes. 4 large baking potatoes, peeled and cubed
1 (16 ounce) can baked beans
1 (12 ounce) can corned beef, broken into pieces
1 dash Worcestershire sauce
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the potatoes in a large pot with just enough water to cover. Bring to a boil and simmer until tender, about 10 minutes. Drain and mash, flavoring with milk, butter, salt or however you like to make them.

4 large potatoes, peeled and cut into chunks
1 (16 ounce) can baked beans
1 (12 ounce) can corned beef, crumbled
splash Worcestershire sauce
1/2 cup cheddar cheese, shredded
salt and white pepper
milk (enough to mash potatoes)
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Preheat oven to 400*.
  • Boil potatoes in enough salted water to cover them until tender, about 15 minutes. Drain and mash, season with salt and pepper, butter and milk.
  • Pour the can of baked beans into the bottom of a casserole dish (7 x 11).
