- Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.

- In large bowl, mix Corn Muffin ingredients until moistened (batter will be lumpy). Pour batter into muffin cups, filling each half full. Bake 15 to 17 minutes or until golden and toothpick inserted in center comes out clean. Cool completely.

- Heat large skillet on medium-high heat. Add ground beef. When meat is browned, add onions and peppers.
- In a medium-sized bowl, prepare BBQ sauce by mixing together brown sugar, vinegar, BBQ seasoning, Worcestershire sauce, and tomato sauce.

I also love to serve this with Mexican coleslaw, but the sloppy Joe's are great on their own. I even make this with ground turkey which has less fat, but that it is up to you. I like to serve over a spicy cornbread and top with some monterey jack cheese. It makes a great Saturday or Sunday dinner.

- Vegetables -- In a large saute pan, add the oil and bring to medium heat. Saute the celery, garlic, onion and green pepper until lightly sauteed.
