Time 50m

Yield 4 to 6 servings

Number Of Ingredients 8

1 1/2 pounds small Yukon gold potatoes
Salt
8 tablespoons (1 stick) unsalted butter
1 small yellow onion, roughly chopped
2 cloves garlic, roughly chopped
2 cups corn, from about 2 ears of corn, or 2 cups frozen and thawed kernels
Freshly ground black pepper
1 1/2 cups heavy cream

Steps:

  • Place the potatoes in a large pot, cover with cold water and season with salt. Bring to a boil, reduce the heat to medium and simmer until tender, about 20 minutes. Drain well, then cool slightly. Return the potatoes to the pot and, using a masher, mash the potatoes.
  • Meanwhile, melt the butter in medium, heavy skillet over medium heat. Add the onions and saute until translucent, about 5 minutes. Add the garlic and corn and saute about 5 minutes. Season with salt and pepper. Add the cream and cook over medium-low heat for 3 minutes longer.
  • Add the sauteed corn to the mashed potatoes and stir to combine until the liquid is fully absorbed. Season with salt and pepper. Serve immediately.

Provided by Ken2729

Categories     Low Protein

Time 52m

Yield 6-8 serving(s)

Number Of Ingredients 8

5 russet baking potatoes
8 1/2 ounces Jiffy cornbread mix (I use two)
1/2 cup spring onion
4 tablespoons butter
salt
pepper
1 cup heavy whipping cream
1/4 cup milk (Any kind -- whole, 2% milk, lactaid)

Steps:

  • Peel and cut potatoes into cubes. Then boil for 20-30 minutes or until soft enough for a knife to easily pass through. Drain and set aside when done.
  • Meanwhile, bake cornbread according to directions. Set aside for cooling.
  • In a Dutch oven or large pot, melt the butter and add the potatoes.
  • Add the milk and half of the heavy cream. Mash the potatoes until you have your desired consistency (runny or thick).
  • Season with salt and pepper, even more butter to taste.
  • Cut a large piece of cornbread and crumble into the mashed potatoes. Stir.
  • Potatoes will thicken, so add more whipping cream until you have desired consistency.
  • Stir in chopped green onions.
  • NOTE: You don't want the taste of the onions to overpower the mashed potatoes, so allow potatoes to cook, while stirring, on low heat while the flavor of the onions blend with the potatoes for about 3-5 minutes.
  • You'll know when it's ready!

CREAMY MASHED POTATOES WITH CRISPY BROWN ONIONS

Creamy Mashed Potatoes with Crispy Brown Onions image

Provided by Food Network

Categories     side-dish

Time 45m

Yield 6 servings

Number Of Ingredients 10

2 1/2 pounds Yukon gold or other yellow-fleshed potatoes
Salt
Vegetable oil, for frying
1/2 pound onions, cut crosswise into thin slices and separated into rings
All-purpose flour
Pinch freshly grated nutmeg
12 tablespoons (6 ounces) unsalted butter, cut into small pieces, at room temperature
1/2 cup heavy cream, brought to a boil
Freshly ground white pepper
Fresh parsley leaves, for garnish

Steps:

  • Fill a large mixing bowl with cold water. With a swivel-bladed vegetable peeler, peel each potato and remove any "eyes," then cut it in quarters with a sharp knife and put in the bowl of water.
  • Put the potatoes in a large pot and add cold water to cover them. Salt the water. Over high heat, bring the water to a boil, skimming off foam that rises to the surface; then reduce the heat to maintain a simmer and cook the potatoes just until tender enough to be pierced easily with a skewer or a sharp knife tip.
  • While the potatoes are boiling, prepare the onions: In a deep-fryer or a deep, heavy saucepan, heat about 3 inches of oil to 375 degrees F. Lightly dust the onion rings with flour and carefully drop them into the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry them until golden, 3 to 5 minutes, removing them with a slotted spoon or wire skimmer to drain on paper towels. Season lightly with salt and keep warm.
  • When the potatoes are done, drain them immediately. Using a ricer or a food mill, puree the potatoes into a mixing bowl. Add the nutmeg, 8 tablespoons of the butter, and the hot cream. With a wooden spoon, stir them into the potatoes. Season, to taste, with salt and pepper.
  • Mound the potatoes in a heated serving bowl. Put the remaining butter in a saucepan or skillet and, over medium-high heat, melt it and continue cooking just until it turns golden brown. Lightly season the butter with salt and immediately drizzle it over the potatoes.
  • Pile the crispy onions on top of the mashed potatoes. Garnish with parsley and serve immediately.

CORNBREAD

Cornbread image

This basic recipe is so easy and forgiving that you may find yourself making cornbread as often as your mother made mashed potatoes. Only a few ingredients are pretty much fixed: the salt, the baking powder, cornmeal and flour (you want a little flour for lightness). Other than that, feel free to experiment with bits of cooked bacon, sautéed onions or shallots, chili powder or cumin, chopped chilies or herbs, grated cheese, mashed or puréed beans or fresh, canned or frozen corn. The options are practically endless.

Time 45m

Yield 8 servings

Number Of Ingredients 8

4 tablespoons butter, olive oil, lard or bacon drippings
1 1/2 cups medium-grind cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1/4 to 1/2 cup sugar
2 eggs
1 1/4 cups milk, more if needed

Steps:

  • Preheat oven to 375 degrees. Put fat in a 10-inch cast-iron skillet or in an 8-inch square baking pan. Place pan in oven.
  • Meanwhile, combine dry ingredients in a bowl. Mix eggs into milk, then stir this mixture into dry ingredients, combining with a few swift strokes. If mixture seems dry, add another tablespoon or two of milk.
  • When fat and oven are hot, remove skillet or pan from oven, pour batter into it and smooth out top. Return pan to oven. Bake about 30 minutes, until top is lightly browned and sides have pulled away from pan; a toothpick inserted into center will come out clean. Serve hot or warm.

MUSTARD AND SPRING ONION MASH

Mustard and Spring Onion Mash image

Baking the potatoes first gives them a nice creamy texture. The potency of the mustard will diminish as the potatoes are being stirred over the burner; so if you really want to feel the burn, add an extra teaspoon or so of mustard just before serving.

Yield Serves 4

Number Of Ingredients 5

4 8-ounce russet potatoes
4 tablespoons (1/2 stick) butter
3 tablespoons prepared hot English mustard (such as Colman's)
1 cup whole milk
1 cup thinly sliced green onions

Steps:

  • Preheat oven to 375°F. Place potatoes on oven rack. Bake until tender when pierced with fork, about 50 minutes. Scoop out pulp from potatoes into heavy large saucepan; discard skins. Add 3 tablespoons butter to potatoes and mash well. Mix in mustard. Gradually add milk and mash until smooth. Stir potatoes over medium-low heat until heated through, about 5 minutes. Mix in green onions. Season to taste with salt and pepper. Transfer to bowl. Top with remaining 1 tablespoon butter and serve.

Tips:

  • Choose the right cornbread: Use a sweet or savory cornbread, depending on your preference. If you're using a sweet cornbread, you may want to reduce the amount of sugar in the mashed potatoes.
  • Use fresh spring onions: Spring onions add a bright, fresh flavor to the dish. If you don't have fresh spring onions, you can use a small onion, finely chopped.
  • Don't overcook the potatoes: The potatoes should be cooked until they're tender, but not mushy. Overcooked potatoes will make the dish gluey.
  • Use a food processor or blender to make the cornbread crumbs: This will give you a fine, even crumb that will blend well with the mashed potatoes.
  • Don't be afraid to experiment: This recipe is a great starting point, but you can feel free to add other ingredients to taste. Some popular additions include cheese, bacon, and herbs.

Conclusion:

Cornbread mashed potatoes with spring onions is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to use up leftover cornbread, and it's also a great side dish for chicken, pork, or fish. So next time you're looking for a new and exciting way to serve mashed potatoes, give this recipe a try.
