CLASSIC CORNBREAD

Classic Cornbread image

Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

  • For the best results, use fresh cornmeal. You can also use store-bought cornmeal, but make sure it's finely ground.
  • To make sure your cornbread is moist, don't overmix the batter. Overmixing can make the cornbread tough.
  • If you want a crispy crust on your cornbread, bake it in a preheated cast iron skillet.
  • Cornbread is best served warm, but it can also be stored at room temperature for up to 3 days, or in the freezer for up to 3 months.
  • To reheat cornbread, wrap it in aluminum foil and bake it in a 350°F oven for about 15 minutes, or until it's warmed through.
