One 14.75-ounce can creamed corn

Time 55m

Number Of Ingredients 8

2 tablespoons unsalted butter, plus more for baking dish
1/2 small yellow onion, diced small (1/2 cup)
1 jalapeno, diced small
Coarse salt and ground pepper
2 cups whole milk
2 cups frozen corn kernels, thawed
1/2 cup yellow cornmeal
4 large eggs, yolks and whites separated

Steps:

  • Preheat oven to 375 degrees. Butter an 8-inch square baking dish. In a medium pot, melt butter over medium-high. Add onion and jalapeno and season with salt and pepper. Cook until onion is soft, about 5 minutes. Add milk and corn and cook until milk is very hot but not bubbling, about 3 minutes. Whisk in cornmeal and cook, whisking constantly, until mixture is thick, about 2 minutes. Remove from heat and let cool 10 minutes. Whisk in egg yolks.
  • In a large bowl, whisk egg whites until soft peaks form. Fold into corn mixture, then pour into baking dish. Bake spoon bread until browned on top and set in middle, 30 to 35 minutes, rotating dish halfway through. Let cool 5 minutes before serving.

Tips:

  • Choose the right cornmeal: For the best flavor and texture, use a coarse-ground cornmeal. This type of cornmeal will give your spoon bread a slightly gritty texture that is characteristic of traditional Southern spoon bread.
  • Use buttermilk: Buttermilk helps to make spoon bread light and fluffy. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter: Overmixing the batter will make the spoon bread tough. Stir just until the ingredients are combined.
  • Bake the spoon bread in a hot oven: This will help to create a crispy crust on the outside and a moist and fluffy interior.
  • Serve the spoon bread warm: Spoon bread is best served warm from the oven. It can be eaten on its own or with your favorite side dishes.

Conclusion:

Corn spoon bread is a delicious and versatile dish that can be served as a side dish, main course, or snack. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet or savory, there is a corn spoon bread recipe out there for you. So next time you are looking for a comforting and satisfying dish, give corn spoon bread a try.
