ANDREA PUDDING - CREAM CORN SOUFFLE
My daughter Andrea has loved this stuff since she was little. It's a recipe that has been handed down form generation to generation. Now, Andrea makes it anytime we have a family dinner, Thanksgiving, etc. She has adapted it from her great grandmother's recipe to her grandmother's recipe, to her mom's recipe, to my recipe. Wonderful cream corn and cheese souffle for any occasion.

CORN SOUFFLE
My favorite holiday recipe! I have started making it during the year because twice a year isn't enough for me! I even have my mother in law requesting it for family dinners!! The final product is impressive- just don't let them know how easy it really is! This is also really good the next day (if you have any leftovers). My dad puts a scoop of leftover corn souffle in his eggs! He swears by it but I'll just take his word for it!

SWEET CORN SOUFFLE RECIPE - (4.4/5)
Provided by CandyH
Number Of Ingredients 9
Steps:
- 1.Preheat oven to 350F. Prepare soufflé dishes with non-stick cooking spray. 2.In a small saucepan over low heat, bring milk to a simmer. Remove from heat. 3.In a separate saucepan, melt butter and sugar over medium low heat. When butter is melted and sugar dissolved, add flour all at once and briskly whisk it into butter until smooth. Make sure flour is completely absorbed. Continue whisking lightly until flour has cooked, another two to three minutes. 4.Add heated milk all at once to butter and flour and whisk until smooth. Continue to whisk about two minutes until mixture has thickened. Remove from heat. 5.After mixture has cooled for a few minutes, whisk in egg yolks only (reserve egg whites), one at a time. Then add seasonings and whisk to combine. 6.Add half of roasted corn to base and whisk to combine. 7.In bowl of a stand mixer fitted with whisk attachment, whisk egg whites and cream of tartar until egg whites form soft peaks. Add approximately 1 tablespoon of soufflé base to egg whites and fold in gently using a whisk or a rubber spatula. Fold in remaining egg whites to soufflé. 8.Transfer to prepared soufflé dishes and bake on a lined cookie sheet or half sheet pan on lowest pan in oven. Bake for approximately 25-28 minutes until soufflés have puffed and are golden brown. Serve immediately.
Tips:
- Select the right corn: Use fresh, sweet corn for the best flavor. If using frozen corn, thaw it completely before using.
- Use a sharp knife: When cutting the corn off the cob, use a sharp knife to ensure clean, even cuts.
- Don't overmix the batter: Overmixing the batter will result in a tough, dense souffle. Mix just until the ingredients are combined.
- Bake until golden brown: The souffle is done baking when it is golden brown on top and a toothpick inserted into the center comes out clean.
- Serve immediately: Souffles are best served immediately after baking, as they will start to deflate as they cool.
Conclusion:
Corn souffle is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It is easy to make and can be tailored to your own taste preferences. With its light and fluffy texture and sweet corn flavor, corn souffle is sure to be a hit at your next gathering.
