CORN PUDDING - MW

Corn Pudding - MW image

This is from The Cooking Book by the Junior League of Louisville (1979). It's called Peyton's Corn Mousse from Judy Hoge. What I love about it is that it's a microwave recipe. This is my go-to for a quick and easy side dish.

Time 20m

Number Of Ingredients 6

3 Tbsp corn starch
1/4 c milk
2 can(s) corn, cream-style
3 eggs, beaten
1/2 tsp salt
1/2 c sugar

Steps:

  • 1. Grease a 1 1/2 quart casserole (I use a 7x11 inch glass dish, but I've used round ones in the past).
  • 2. Stir cornstarch into milk then blend in rest of ingredients. Pour into prepared dish and put dish into microwave.
  • 3. Cook on HIGH 5 minutes, then stir. Cook on HIGH 5 minutes more, then stir. Cook on HIGH 5 minutes more. Let stand 5 minutes before serving.
  • 4. Alternatively, you can bake this in a 375°F preheated oven for 45-60 minutes; stirring every 15 minutes.

Tips:

  • Use fresh corn: Fresh corn on the cob will give your pudding the best flavor. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Don't overcook the corn: Overcooked corn will be tough and chewy. Cook the corn just until it is tender, about 5 minutes in the microwave.
  • Use a high-quality cheese: A good quality cheddar cheese will give your pudding a rich and creamy flavor. Avoid using pre-shredded cheese, as it often contains additives that can affect the flavor and texture of your pudding.
  • Don't overbeat the eggs: Overbeaten eggs will make your pudding tough. Beat the eggs just until they are combined.
  • Bake the pudding in a water bath: Baking the pudding in a water bath will help to prevent it from curdling. Place the pudding dish in a larger pan filled with hot water and bake according to the recipe instructions.

Conclusion:

Corn pudding is a delicious and versatile dish that can be served as a side dish, main course, or dessert. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet or savory, creamy or cheesy, there is a corn pudding recipe out there for everyone. So next time you are looking for a quick and easy dish to make, give corn pudding a try. You won't be disappointed!
