Southern Jiffy Corn Pudding image

We always make this at Thanksgiving! This is NOT the "souffle" type corn pudding that most people make. I am a CORN fanatic, so I love this recipe. Is great for Thanksgiving, but is easy enough to make for an everyday meal.

Pour mixture into the prepared casserole dish. Bake for 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean. For a more of a pudding like texture, add 2 more eggs and half a cup of half and half. Tip: Rinse the corn to reduce the "canned" taste.

Time 55m

Number Of Ingredients 5

1 box jiffy corn bread mix
1 can(s) whole kernel corn (drained)
1 can(s) cream style corn
8 oz sour cream
1 stick butter

Steps:

  • 1. Melt butter in mixing bowl.
  • 2. Add both cans of corn, and sour cream. Mix well.
  • 3. Add Jiffy mix and mix well.
  • 4. Bake 9in 8x8 pan for 45 minutes at 350 degrees.

Tips:

  • For the best texture, use fresh corn kernels. If using frozen corn, thaw it completely before using.

  • Feel free to add other ingredients to the pudding to suit your taste, such as chopped green bell pepper, diced onion, or crumbled bacon.
  • Serve the pudding immediately, or store it in the refrigerator for up to 3 days.
