CORN PONE

Corn Pone image

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. I cook it until it's crisp almost all the way through. It's delicious hot, warm or cold. -Tina Quiggle, LaGrange, Georgia

Time 55m

Yield 8 serving(s)

Number Of Ingredients 9

1 (9 inch) deep dish pie shells, flute edges high
4 eggs, lightly beaten
1 1/4 cups whipping cream
1 teaspoon salt
1 tablespoon grated yellow onion (or finely chopped)
1 1/2 cups fresh corn kernels
1 cup grated extra-sharp cheddar cheese
paprika
1 tablespoon finely chopped fresh parsley

Steps:

  • Preheat oven to 425º.
  • Prick crust well on bottom and sides with fork, par-bake pastry crust with parchment paper and pie weight beans for 5-7 minutes until firm but not brown. (Remove beans and parchment paper.)
  • Stir together rest of ingredients except paprika and parsley. Pour carefully into pie shell.
  • Sprinkle with a little paprika.
  • Bake 10 minutes, reduce heat to 350º and bake 30 minutes longer or until center is almost firm. Cool about 10 minutes.
  • Garnish with fresh chopped parsley if desired.

Tips:

  • Use Fresh Corn: Fresh corn is the key to a delicious corn pie. Look for corn on the cob with bright green husks and plump kernels.
  • Scrape the Cob: When removing the kernels from the cob, use a sharp knife to scrape them off instead of slicing them. This will help to preserve the corn's flavor and texture.
  • Season the Corn: Before adding the corn to the pie, season it with salt, pepper, and any other desired spices. This will help to enhance the corn's flavor.
  • Use a Variety of Cheeses: Feel free to experiment with different types of cheese in your corn pie. A good combination is to use a blend of cheddar, mozzarella, and Parmesan cheeses.
  • Bake Until Golden Brown: Bake the corn pie until the crust is golden brown and the cheese is melted and bubbly. This will ensure that the pie is cooked through and has a delicious crispy crust.
