Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 9

1/2 cup fresh basil leaves, chopped
1/2 cup fresh parsley leaves, chopped
8 cloves garlic
Zest of 1 lemon
Pinch kosher salt
Freshly ground black pepper
2 sticks butter, softened
Oil, for oiling grill
6 ears corn, shucked and silks cleaned

Steps:

  • In a food processor, combine the basil, parsley, garlic, lemon zest, a big pinch of salt and a few grinds of pepper. Pulse until everything is thoroughly chopped and combined. Add the butter and pulse until thoroughly mixed. Scrape the butter mixture out of the food processor onto a piece of plastic wrap or parchment paper and form into a log. Store in the refrigerator until ready to use.
  • Preheat a grill or a grill pan for medium-high heat. Lightly oil the grill grates. Grill the corn, rotating it as it cooks, until lightly charred in places, 3 to 4 minutes per side.
  • Remove the corn from the grill, smear each ear with a generous amount of the herb butter and serve.

Tips:

  • Use fresh corn on the cob: The fresher the corn, the sweeter and more flavorful it will be.
  • Cook the corn in its husks: This will help to keep the corn moist and flavorful. You can either boil, steam, or grill the corn in its husks.
  • Make the horseradish-Dijon butter sauce ahead of time: This will give the flavors time to meld and develop. You can store the sauce in the refrigerator for up to 3 days.
  • Serve the corn on the cob hot, with the horseradish-Dijon butter sauce on the side: This will allow your guests to add as much or as little sauce as they like.

Conclusion:

Corn on the cob with horseradish-Dijon butter sauce is a delicious and easy side dish that is perfect for any occasion. It is a great way to enjoy fresh corn on the cob, and the horseradish-Dijon butter sauce adds a nice kick of flavor. This dish is sure to be a hit with your family and friends.
