4 ears fresh corn on the cob, in the husk, silks removed
1 stick (8 tablespoons) unsalted butter, softened
2 tablespoons garlic powder
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
1 cup crumbled feta cheese

Steps:

  • Prepare a grill for medium heat.
  • Throw the corn (in the husk) on the grill and grill, turning occasionally, until the corn is cooked and the husks have char marks, 10 to 15 minutes. Strip the husks off the corn.
  • While the corn is cooking, add the butter, garlic powder, smoked paprika and some salt and pepper to a small bowl and mix well.

  • Soak at least 4 hours in water or overnight.
  • You can also cook this on the bar-b-q.
  • Drain excess water and place on grill; turn over about every 15 minutes.

  • When you take it off the grill, pull the husk back but don't break it off--the silk will come off easy.
  • Use the husk as a handle and roll the cob in butter.
