**Cornmeal bread patties are a Southern delicacy frequently featured in soul food restaurants across the country. Fried to golden-brown perfection, these patties are a crispy and flavorful side dish or main course, depending on how they're served. Cornmeal bread patties are similar to hush puppies, but they're made with cornmeal bread instead of cornmeal. The result is a slightly denser and more substantial patty with a unique flavor and texture. They may be served with a variety of dipping sauces, such as ketchup, mustard, or tartar sauce. This article provides recipes for three cornbread variations: classic cornbread, jalapeno cornbread, and bacon cornbread. All three are packed with flavor and sure to please even the pickiest of eaters.**

Fresh Corn Pancakes image

Provided by Ina Garten

Time 45m

Yield 20 to 22 pancakes

Number Of Ingredients 15

1 cup fine yellow cornmeal, such as Quaker
1/2 cup stone-ground cornmeal, such as Bob's Red Mill
1/2 cup all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
Kosher salt
1 3/4 cups buttermilk, shaken
6 tablespoons (3/4 stick) unsalted butter, melted
2 extra-large eggs
1/2 teaspoon Sriracha
3 cups fresh corn kernels (4 ears) (see Cook's Note)
3 tablespoons minced fresh chives, plus extra for serving
1 1/2 tablespoons seeded, minced jalapeno pepper
8 tablespoons (1 stick) clarified butter, for frying (see Cook's note)

Steps:

  • Preheat the oven to 250 degrees F. Line two sheet pans with parchment paper.
  • In a large bowl, stir together the fine and stone-ground cornmeals, the flour, sugar, baking powder, baking soda, and 1 tablespoon salt. In a medium bowl, whisk together the buttermilk, melted butter, eggs, and Sriracha. Stir in the corn, chives, and jalapeno pepper and mix into the dry ingredients with a rubber spatula until moistened. Don't overmix!
  • Heat 1 tablespoon of clarified butter in a large (12-inch) saute pan over medium heat until it sizzles. Drop 1/4-cup measures of batter into the pan without crowding them. Press each pancake very lightly with a small metal spatula. Cook for 2 minutes, turn, and cook for 1 1/2 minutes, until both sides are browned and the center of the pancake is firm. Place the pancakes on the prepared sheet pans and keep them warm in the oven while you cook the rest of the batter. Continue making the pancakes, adding more clarified butter to the pan, as needed. Sprinkle with salt and serve warm with a sprinkling of minced chives.

FRIED CORNBREAD (SOUTHERN STYLE)

Fried Cornbread (Southern Style) image

A SOUTHERN bread for sure! Goes well with any boiled leafy greens, cabbage, lima beans, black-eyed peas, fried fish or pork chops. Just can't beat it!!! Just like Grandma use to make!

Provided by Seasoned Cook

Categories     Breads

Time 20m

Yield 5-6 serving(s)

Number Of Ingredients 3

1 cup self-rising cornmeal mix
2/3 cup water
1 cup vegetable oil (for frying)

Steps:

  • Mix first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
  • In a skillet or frying pan bring oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then furn down to #5 on my stove. Drop by tablespoons full and pat out with back of spoon to make a pattie. Turn over when bottom is light brown.
  • Serve and enjoy this tasty bread!

Tips:

  • Choose the right cornmeal. Stone-ground cornmeal will give your patties a more rustic and flavorful texture, while finely-ground cornmeal will produce a more tender patty.
  • Don't overmix the batter. Overmixing will make the patties tough. Mix just until the ingredients are combined.
  • Let the batter rest. Letting the batter rest for 15-30 minutes before cooking will help the cornmeal absorb the liquid and produce a more tender patty.
  • Cook the patties over medium heat. Cooking the patties over medium heat will help them cook evenly and prevent them from burning.
  • Serve the patties hot. Cornmeal bread patties are best served hot out of the pan. You can serve them with butter, honey, or your favorite dipping sauce.

Conclusion:

Cornmeal bread patties are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They're easy to make and can be customized to your liking. With a few simple ingredients, you can create a hearty and satisfying meal that the whole family will love.
