Categories     One Dish Meal

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 8

1 cup elbow macaroni
1 (15 1/4 ounce) can yellow whole kernel corn, undrained
1 (15 1/4 ounce) can white whole kernel corn, undrained
1 (15 ounce) can cream-style corn
1 cup cheddar cheese, cubed or shredded
1/2 cup butter or 1/2 cup margarine (can be reduced by half if need be)
1/2 cup diced onion
1 green bell pepper, diced (optional)

Steps:

  • In a 13X9 inch ungreased pan, combine all ingredients.
  • Bake covered in a preheated 350 degree oven for 30 minutes.
  • Uncover, then continue baking for an additional 30 minutes.
  • Serve hot.

Tips:

  • Use freshly cooked corn: Fresh corn adds a vibrant sweetness and a crisp texture to the casserole. If you don't have fresh corn, you can use frozen or canned corn, but be sure to drain it well before adding it to the casserole.
  • Cook the macaroni al dente: Al dente macaroni will hold its shape and texture in the casserole. Cook the macaroni according to the package directions, but be sure to check it a few minutes before the recommended cooking time is up.
  • Use a good quality cheese: A good quality cheese will melt smoothly and evenly, and it will add a lot of flavor to the casserole. Use a sharp cheddar cheese or a combination of cheddar and mozzarella.
  • Don't overmix the casserole: Overmixing the casserole will make it tough. Gently stir the ingredients together until they are just combined.
  • Bake the casserole until it is golden brown and bubbly: The casserole is done baking when it is golden brown and bubbly around the edges. The center of the casserole should be set.

Conclusion:

Corn macaroni casserole is a simple yet delicious dish that is perfect for a weeknight meal. It is made with just a few ingredients that you probably already have on hand, and it can be easily customized to your liking. Whether you like your casserole cheesy, creamy, or spicy, there is a recipe out there that is perfect for you.
