2 plum tomatoes, coarsely chopped
1/3 cup chopped white onion
2 tablespoons chopped fresh cilantro
1 to 2 tablespoons chopped pickled jalapeño chiles
1 tablespoon fresh lime juice
For fritters
2 ears corn, shucked
1 large egg
1/2 cup milk
1/3 cup yellow cornmeal
2 1/2 tablespoons all-purpose flour
1/4 teaspoon salt
2 to 3 tablespoons vegetable oil

1 tablespoon baking powder
½ teaspoon cumin
½ cup sugar
½ teaspoon salt

2 eggs, beaten
1 cup milk
¼ cup butter, melted
2 cups grated zucchini
1 ½ cups fresh corn, kernels cut from cob
1 cup finely shredded Cheddar cheese
oil for frying

1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon ground turmeric
1/2 teaspoon cumin seeds
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1 teaspoon salt, plus more to taste
1/2 cup milk
2 tablespoons buttermilk
1 cup fresh or well-drained defrosted corn kernels
Canola oil for deep frying

Steps:

  • In a medium bowl, combine the flour, cornmeal, baking powder, baking soda, turmeric, cumin seeds, garam masala, cayenne, pepper and 1 teaspoon salt. Whisk until thoroughly combined. Pour in the milk and buttermilk and stir until just mixed. Stir in the corn.

1 1/2 cups diced zucchini
1 medium red onion, diced, divided
3 large cloves garlic, finely chopped
1 jalapeño chile, seeded and diced
1/2 teaspoon sea salt, divided
1 1/2 tablespoons extra-virgin olive oil
Olive oil cooking spray
1/2 cup chopped cilantro, divided
2 tablespoons fresh lime juice, divided
1 cup all-purpose flour
1/2 teaspoon ground cumin
1/4 teaspoon baking powder
1 egg
2 cups corn kernels (thawed if frozen)

Steps:
