PEANUT BUTTER CORNFLAKE BARS
Peanut butter cornflake bars were one of my favorite treats when I was a little girl. If you like chocolate, I have a friend who spreads 1 cup of melted chocolate chips over the top. Let the chocolate set before cutting into the bars. -Laura Campbell, Lisbon, Maine

These cookies remind me of peanut butter fudge. My Grandmother made them for us, and now I make them for my family. There is nothing healthy about this recipe but it is a great sweet-tooth fixer.

PEANUT BUTTER CHEWS
Have been making these since I was 15. Served in our school cafeteria for dessert and no one ever wanted to trade. They are requested for every gathering. I even sell them at our local bar and batches of them to friends who hate to cook.

Steps:
- 1. Put sugar, corn syrup, peanut butter, and butter in large non-stick pot. Bring to boil and constantly stir so it does not burn to bottom of pan. Use med to med.low heat.
- 2. Once it starts to bubble on top, take off hot burner to a cool burner. Slowly add in corn flakes stirring in between so they all get covered. If a little to syrupy, add in the 7th cup of corn flakes.
- 3. Let set a couple of minutes to cool for handling..With tablespoon form balls and put on wax paper on cookie sheet and let cool..If you want them to set faster, stick them in fridge for awhile but do not keep them in there, they will get to hard to eat. Makes approx. 35 balls depending on the size you make them. Store them in closed container wax paper in between layers.
Tips:
- Use fresh corn flakes. Stale corn flakes will not hold their shape as well and will make the chews more crumbly.
- Use a good quality peanut butter. The better the peanut butter, the better the chews will taste. Look for a peanut butter that is made with 100% peanuts and no added salt or sugar.
- Don't overcook the chews. The chews should be cooked until they are just set, but not too hard. Overcooked chews will be dry and crumbly.
- Let the chews cool completely before cutting them. This will help them to hold their shape and prevent them from sticking to the knife.
- Store the chews in an airtight container at room temperature. The chews will keep for up to 2 weeks.
Conclusion:
Corn flake peanut butter chews are a delicious and easy-to-make treat that is perfect for any occasion. They are a great way to use up leftover corn flakes, and they are also a fun and festive snack for parties and holidays. With just a few simple ingredients, you can make a delicious batch of corn flake peanut butter chews that everyone will love.
